Vegetarian Gorditas with Potato and Cheese
Why this recipe works
- Soft, fresh and hearty: The warm corn pocket, creamy potato filling and crisp lettuce give the gorditas a satisfying contrast.
- Simple savoury depth: Softened onion, queso fresco and salsa add richness, tang and gentle sharpness to the mashed potato.
- Easy to adapt: The masa base can take different fillings, while the lettuce, salsa and lime keep the finished gorditas bright.

Ingredient notes
- Use masa harina, not cornmeal: Masa harina is made from nixtamalised corn and gives gorditas their proper flavour, aroma and pliable texture.
- Queso fresco keeps the filling crumbly: Queso fresco adds mild saltiness without melting into a heavy sauce, which helps the potato filling stay spoonable.
- Finish with lime to taste: A squeeze of lime cuts through the potato and cheese, especially if the salsa is mild or rich.
Texture tips
- Hydrate the dough properly: Resting the masa allows it to absorb the water fully, making the dough smoother and less likely to crack.
- Steam-dry the potatoes: Returning the drained potatoes to the hot pot briefly removes excess moisture, keeping the filling thick rather than wet.
- Toast before filling: Cooking the gorditas in a dry pan gives the outside light browning while keeping the centre soft enough to split.
Make-ahead tips
- Keep the parts separate: Store the cooked gorditas and potato filling in separate airtight containers, then add lettuce and lime just before serving.
- Reheat in a dry pan: Warm the gorditas in a dry frying pan to refresh their surface, and heat the filling gently until piping hot.
- Freeze unfilled gorditas: Cooked, unfilled gorditas freeze well and can be reheated from frozen in a pan before adding the hot filling.
Authenticity notes
- A classic antojito format: Gorditas are part of the Mexican antojito family: small corn-based snacks or meals filled after cooking.
- Fillings vary widely: Potato and cheese is a practical vegetarian option, but the same masa pocket can be filled with beans, vegetables or other savoury mixtures.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 1 tsp of the salt. Bring to the boil, then simmer for 12 to 15 minutes until very tender.
- While the potatoes cook, make the dough: mix the masa harina with the remaining 0.5 tsp salt in a bowl. Pour in the warm water and mix until a soft dough forms, then knead for 1 to 2 minutes until smooth. Cover and rest for 10 minutes so the masa fully hydrates.
- Drain the potatoes well and return them to the hot pot for 1 minute to steam-dry. Mash until smooth. Set aside while you cook the onion.
- Finely dice the onion. Heat 1 tbsp of the vegetable oil in a frying pan over a medium heat, then cook the onion for 6 to 8 minutes until soft and lightly golden. Stir the onion into the mashed potato, then fold in the queso fresco and the salsa.
- Divide the dough into 6 equal balls and flatten each into a disc about 1 cm thick. Heat a dry large frying pan over a medium heat. Cook the gorditas for 2 to 3 minutes per side until lightly toasted with a few brown spots, then cook the edges briefly to help them puff slightly.
- When cool enough to handle, split each gordita most of the way through to make a pocket. Spoon in the potato filling. Top with shredded iceberg lettuce and squeeze over lime to finish, serving straight away.
Recipe notes
Tips
- If the dough cracks when you shape it, knead in a little more warm water, 1 tsp at a time, until it feels supple.
- For the best texture, keep the gorditas about 1 cm thick so they puff slightly and are easy to split without tearing.
- If serving anyone who is vulnerable to foodborne illness, make sure the potato filling is kept hot and the gorditas are served promptly rather than left at room temperature.
Substitutions
- Replace Yukon Gold potato with sweet potato for a sweeter, softer filling.
- Replace Queso fresco with feta cheese for a saltier, tangier finish.
- Replace Salsa with salsa verde for a brighter, sharper flavour.
Storage
- Refrigerate up to 2 days
- Store gorditas and filling separately in airtight containers. Reheat gorditas in a dry frying pan over a medium heat for 1 to 2 minutes per side, and warm the filling gently in a pan with a splash of water until piping hot; add the lettuce and lime just before serving. Freeze cooked gorditas (unfilled) for up to 2 months and reheat from frozen in a dry pan over a low to medium heat until hot throughout.
