Vegetarian Black Bean Quesadilla
Why this recipe works
- Quick to cook: Canned black beans and a short pan-fry keep the whole dish practical for a fast lunch or simple dinner.
- Smoky, savoury filling: Softened onion and pepper give sweetness, while cumin and smoked paprika add warmth without making the quesadilla hot.
- Crisp outside, melted centre: Cooking the filled tortilla in a dry pan after sautéing the vegetables helps the outside turn golden while the cheese binds the filling.

Common mistakes
- Using heat that is too high: If the pan is too hot, the tortilla can brown before the cheese melts. Keep the heat moderate and lower it if the outside colours too quickly.
- Overfilling the tortilla: Spread the bean mixture evenly rather than piling it high, so the quesadilla holds together and flips cleanly.
- Cutting too soon: A brief rest lets the melted cheese settle slightly, giving cleaner wedges and less filling loss.
Make-ahead tips
- Prep the filling in advance: The onion, pepper and bean mixture can be cooked ahead, cooled and refrigerated, then assembled with the cheese when ready to eat.
- Reheat for crispness: Reheat cooked wedges in a dry frying pan over low to medium heat until piping hot and crisp again, rather than using the microwave.
Serving ideas
- Serve with salsa: A bright tomato salsa cuts through the richness of the cheese and keeps each bite lively.
- Add a cool topping: Soured cream or Greek yoghurt works well alongside the smoky beans, especially if serving with extra salsa.
- Finish with coriander: Fresh coriander adds a clean herbal note just before serving.
Ingredient notes
- Use drained black beans: Draining the beans helps keep the filling hearty rather than wet, which is important for a crisp tortilla.
- Choose the cheese for the melt: Cheddar gives a sharper flavour, while Monterey Jack makes a milder, stretchier filling.

Ingredients
Instructions
- Halve and thinly slice the onion. Core the red pepper, then thinly slice it into strips. Coarsely grate the cheddar and roughly chop the coriander.
- Heat the olive oil in a large frying pan over a medium heat. Add the onion and red pepper and sauté for 6 to 8 minutes until softened and lightly golden. Stir often so the veg cooks evenly.
- Add the black beans, ground cumin and smoked paprika to the pan. Cook for 2 to 3 minutes, stirring, until the beans are hot and the spices smell fragrant. Tip into a bowl and wipe out the pan.
- Lay one tortilla on a board and scatter over half the cheddar, then spoon on the bean and pepper mixture in an even layer. Top with the remaining cheddar and place the second tortilla on top. Press down gently so it holds together.
- Return the pan to a medium heat and carefully slide in the quesadilla. Cook for 2 to 3 minutes until the underside is golden and the cheese is starting to melt. Flip carefully and cook for a further 2 to 3 minutes until golden and the cheese is fully melted.
- Slide onto a board and rest for 1 minute, then cut into wedges. Serve with salsa, sour cream and a sprinkle of fresh coriander.
Recipe notes
Tips
- For a cleaner cut, let the quesadilla rest for 1 to 2 minutes before slicing so the cheese sets slightly.
- If the tortilla is browning too quickly before the cheese melts, lower the heat and cover the pan with a lid for 1 minute.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised sour cream.
Substitutions
- Replace Cheddar cheese with Monterey jack cheese for a milder, stretchier melt.
- Replace Red pepper with Green pepper for a slightly sharper flavour.
- Replace Sour cream with Greek yogurt for a lighter topping.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate wedges in a sealed container. Reheat in a dry frying pan over a low to medium heat for 3 to 5 minutes per side until piping hot and crisp again; avoid the microwave if you want to keep the tortilla crisp.
