Gazpacho Andaluz (Chilled Spanish Tomato Soup)

In Andalusian cooking, gazpacho is the definitive chilled tomato soup: raw, refreshing and designed to be served very cold. Very ripe tomatoes give the soup its body and sweetness, while cucumber and green pepper keep it crisp and savoury. Soaked bread helps create a smooth, lightly thickened texture, and extra-virgin olive oil is blended in to form a pale, silky emulsion. A splash of sherry vinegar sharpens the finish, making it especially good as a light lunch, starter or drinkable soup served in small glasses on warm days.

Why this recipe works

  • Fresh, bright flavour: Ripe tomatoes, cucumber and green pepper keep the soup clean and refreshing, while sherry vinegar sharpens the finish.
  • Smooth without dairy: Soaked bread and slowly blended olive oil create body and a lightly emulsified texture.
  • No cooking required: Everything is blended and chilled, making it a practical warm-weather lunch or starter.

Timing notes

  • Chill thoroughly: Gazpacho tastes best very cold, so allow enough time in the fridge before serving.
  • Stir before serving: The soup may separate slightly as it sits; stir well to bring the texture back together.

Ingredient notes

  • Use very ripe tomatoes: Because the soup is not cooked, ripe tomatoes are essential for sweetness, colour and rounded flavour.
  • Choose good olive oil: Extra-virgin olive oil is central to the flavour and helps give the gazpacho its smooth, full texture.
  • Balance the vinegar: Sherry vinegar gives the most classic sharpness, but the acidity should be adjusted to taste after blending.

Texture tips

  • For a silkier finish: Pass the blended soup through a sieve, pressing it through to remove skins, seeds and any fibrous pieces.
  • If it thickens in the fridge: Loosen with a little cold water, then taste again and adjust the seasoning before serving.

Authenticity notes

  • Andalusian style: Gazpacho Andaluz is known for its blend of tomato, bread, olive oil, vinegar and raw vegetables, served well chilled rather than hot.
  • Served in bowls or glasses: It can be presented as a light soup, starter or drinkable cold appetiser, depending on the occasion.

  1. Tear the bread into a mixing bowl, add the cold water, and leave to soak for 5 minutes. Meanwhile, roughly chop the tomatoes, peel and roughly chop the cucumber, and deseed and roughly chop the green pepper.
  2. Add the soaked bread and any remaining water to a blender with the tomatoes, cucumber, green pepper, garlic, fine sea salt and sherry vinegar. Blend until very smooth, stopping to scrape down the sides as needed.
  3. With the blender running on low, slowly drizzle in the extra virgin olive oil until the soup looks slightly paler and emulsified. Taste and adjust with a pinch more salt if needed.
  4. For a silkier gazpacho, pass the soup through a sieve into a bowl, pressing with a spoon. Cover and chill for at least 25 minutes, then stir and serve cold in bowls or glasses.

Recipe notes

Tips

  • Use very ripe tomatoes for the sweetest, most rounded flavour, as the soup is served cold and won’t mellow with cooking.
  • If the garlic tastes too assertive, blend it in briefly, taste, then add more only if you want a stronger bite.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, wash the vegetables thoroughly before preparing.

Substitutions

  • Replace Sherry vinegar with red wine vinegar for a slightly fruitier acidity.
  • Replace Crusty white bread with whole-grain bread for a heartier texture and flavour.
  • Replace Extra virgin olive oil with light olive oil for a milder finish.

Storage

  • Refrigerate up to 3 days
  • Keep in a sealed container in the fridge and stir well before serving, as it may separate slightly. Serve well chilled; if it thickens, loosen with a splash of water and re-season to taste.
