Air Fryer Burritos
Why this recipe works
- Crisp outside, hot inside: The air fryer gives the tortillas a golden, lightly crisp finish without deep-frying.
- Well-seasoned filling: Cumin and ancho chilli powder add earthy warmth to the beef, while salsa, sour cream and lime bring freshness at the table.
- Good for planning ahead: The burritos can be cooled, stored and reheated in the air fryer, making them useful for lunches or quick dinners.

Adjust the heat
- For a gentler burrito: Use less ancho chilli powder and choose a mild salsa for serving.
- For more heat: Add extra chilli powder to the beef mixture or serve with a hotter salsa.
- Keep the heat balanced: Sour cream and lime help soften the spice and keep the filling tasting fresh rather than heavy.
Texture tips
- Dry the rice and beans well: Let the drained rice steam off and shake the beans dry before mixing so the tortillas stay crisp.
- Roll tightly: A compact burrito cooks more evenly and gives the tortilla better contact with the hot air.
- Check early if needed: Air fryers vary, so start checking before the end of the cooking time if yours browns quickly.
Make-ahead tips
- Assemble in advance: The burritos can be rolled ahead and refrigerated until ready to air-fry.
- Keep dips separate: Store salsa and sour cream separately so the tortillas do not soften in the fridge.
- Reheat for best texture: Reheat chilled burritos in the air fryer at 180°C (355°F) until piping hot and crisp again.
Common mistakes
- Overfilling the tortilla: Too much filling makes the burritos hard to seal and can stop them crisping evenly.
- Not heating the centre: The outside may brown before the middle is fully hot, so check that the filling is piping hot before serving.
- Skipping the short rest: A brief rest helps the filling settle, making the burritos easier to cut and eat.

Ingredients
Instructions
- Cook the rice in salted boiling water until tender, 10–12 minutes, then drain well. Spread it on a plate to steam off for a few minutes so the burritos do not go soggy.
- Heat the olive oil in a frying pan over a medium-high heat and cook the minced beef for 6–8 minutes, breaking it up, until browned. Stir in the cumin, ancho chilli powder, salt and black pepper, then take off the heat.
- Rinse the black beans in a colander and shake dry. In a bowl, mix the rice, beef, beans and Cheddar until well combined.
- Warm the tortillas briefly so they are flexible, then divide the filling between them. Roll up tightly into burritos, tucking in the sides as you go.
- Air-fry at 200°C (390°F) for 8–10 minutes, turning halfway, until golden and crisp and the centre is hot. Rest for 2 minutes before cutting in half if you like.
- Serve with salsa and sour cream for dipping. Cut the lime into wedges and squeeze over the burritos to finish.
Recipe notes
Tips
- Do not overfill the tortillas; a tight roll helps them crisp evenly in the air fryer.
- If your air fryer runs hot, start checking at 7 minutes and stop once the burritos are evenly golden.
Substitutions
- Replace Cheddar cheese with monterey-jack-cheese for a milder, meltier filling.
- Replace sour cream with greek-yogurt for a lighter dip.
Storage
- Refrigerate up to 2 days
- Cool burritos completely, then refrigerate in a sealed container. Reheat in the air fryer at 180°C (355°F) for 6–8 minutes until piping hot; if frozen, defrost overnight in the fridge first for best texture. Store salsa and sour cream separately.
