Pasta con Pesto di Pistacchi e Ricotta (Pistachio Pesto Pasta)
Why this recipe works
- Fast, fresh sauce: The pesto is blended while the pasta cooks, keeping the whole dish comfortably under 30 minutes.
- Creamy without heaviness: Ricotta gives the pistachio pesto body, while starchy pasta water loosens it into a sauce that coats the noodles smoothly.
- Nutty, herby balance: Pistachios bring sweetness and depth, with basil, lemon zest, Parmesan and black pepper adding freshness and savoury lift.

Ingredient notes
- Choose good pistachios: Use fresh-tasting pistachios rather than stale or overly salty ones, as their flavour sits at the centre of the sauce.
- Use lemon carefully: Lemon zest perfumes the pesto without thinning it; add juice at the table only if the finished pasta needs extra brightness.
- Let the olive oil shine: A smooth, fruity extra-virgin olive oil works especially well here because the sauce is not cooked for long.
Texture tips
- Loosen gradually: Add pasta water a splash at a time until the pesto turns glossy and clings to the noodles rather than sitting in clumps.
- Keep the heat gentle: Toss the pasta and pesto over low heat only briefly; high heat can make ricotta-based sauces lose their smooth texture.
Make-ahead tips
- Prep before boiling: Grate the Parmesan, zest the lemon and pick the basil leaves before the pasta goes on so the sauce comes together quickly.
- Best freshly tossed: The pasta is at its glossiest when served straight away, while the sauce is still warm and loose.
- Reheat gently: Warm leftovers slowly in a pan with a splash of water or a little olive oil until piping hot, stirring to bring the sauce back together.
Serving ideas
- Serve with greens: A crisp green salad or simply dressed bitter leaves balance the richness of the ricotta and pistachios.
- Finish for contrast: Reserved basil, Parmesan, black pepper and a little lemon at the table keep the final bowl fresh and aromatic.

Instructions
- Bring a large pot of water to the boil and season it with the fine sea salt. Add the egg pasta nests and cook until al dente, according to the packet timings. Scoop out about 150 ml of the pasta cooking water, then drain.
- Meanwhile, add the pistachios, garlic and most of the fresh basil to a food processor, reserving a few small leaves to finish. Finely grate in the lemon zest, then add the ricotta, extra virgin olive oil, black pepper and 2 tbsp of the reserved pasta water. Blitz to a thick, creamy pesto, scraping down the sides as needed.
- Return the drained pasta to the warm pot and add the pistachio pesto. Toss over low heat for 1 minute, adding a splash more pasta water until the sauce coats the noodles in a glossy layer. Taste and adjust with a little more fine sea salt if needed.
- Divide between bowls and finish with the parmesan and the reserved basil leaves. Add a final twist of black pepper and serve straight away. If you like, squeeze over a little lemon juice at the table.
Recipe notes
Tips
- For the brightest flavour, add the lemon zest to the pesto before blending so the oils perfume the sauce.
- If the pesto tastes a touch flat, loosen it with a little more pasta water before adding extra salt; the starch helps the sauce cling.
- If serving to anyone who is pregnant, elderly, or immunocompromised, use pasteurised ricotta and ensure the pasta is served piping hot.
Substitutions
- Replace ricotta with crème fraîche for a tangier, looser sauce.
- Replace parmesan with pecorino romano cheese for a saltier finish.
- Replace egg pasta nest with spaghetti for a slightly lighter texture.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water or a little extra virgin olive oil until piping hot, or eat at room temperature as a pasta salad style dish.
