Caribbean Shrimp Bowl
Why this recipe works
- Bright, balanced flavour: Lime cuts through the richness of the coconut rice and avocado, while pineapple rounds out the mild chilli warmth.
- Efficient cooking: The prawns are prepared while the rice steams, keeping the workflow compact and the total time practical for lunch or a weeknight meal.
- Contrasting textures: Fluffy coconut rice, just-cooked prawns, juicy pineapple and creamy avocado make the bowl feel fresh rather than heavy.

Adjust the heat
- For less heat: Replace the mild chilli powder with smoked paprika for warmth without noticeable spice.
- For more heat: Use a hotter chilli powder or add a little fresh chilli to the lime and garlic marinade.
- Keep the bowl balanced: If increasing the chilli, keep the lime and pineapple in place so the heat stays bright rather than harsh.
Timing notes
- Use the rice resting time: Prepare the lime marinade, fruit and herbs while the rice steams off the heat.
- Serve promptly: The bowl is at its best when the prawns are hot, the rice is warm and the avocado has just been cut.
- Best on the day: The fresh toppings, especially avocado and coriander, are brightest when served soon after preparation.
Ingredient notes
- Choosing prawns: Raw peeled king prawns work well here; if using frozen prawns, thaw them fully and pat them dry before marinating.
- Fruit texture matters: Use ripe pineapple for sweetness and an avocado that is ripe but still firm enough to dice cleanly.
- Rice choice: Jasmine rice gives the bowl a soft, fragrant base; basmati makes a slightly drier, more separate-grained version.
Make-ahead tips
- Prep the toppings early: The pineapple and coriander can be prepared ahead; cut the avocado close to serving so it stays fresh.
- Store fresh and cooked items separately: Keep the rice and prawns apart from the pineapple, avocado and herbs where possible to preserve texture.
- Reheat gently: Warm the rice and prawns over low heat with a splash of water until piping hot, then add the cool toppings.

Instructions
- Rinse the jasmine rice in cold water until the water runs mostly clear. Tip into a saucepan with the coconut milk, water and fine sea salt, then bring to the boil. Cover, turn the heat to low and cook for 12 minutes.
- Turn off the heat and leave the rice covered for 10 minutes to finish steaming. Meanwhile, zest and juice the lime into a mixing bowl. Finely grate the garlic into the bowl, then stir in the mild chili powder and fine sea salt. Before adding the raw prawns, set aside a little of this mixture in a separate clean bowl for finishing.
- Add the king prawns to the bowl and toss to coat. Cut the pineapple into bite-sized pieces, dice the avocado, and roughly chop the fresh coriander. Keep the toppings ready by the hob.
- Heat the olive oil in a large frying pan over medium-high heat. Lift the prawns from the marinade and add them to the pan; discard the marinade left in the bowl. Cook for 2 to 3 minutes, turning, until the prawns are pink, opaque throughout and cooked through. Take the pan off the heat and spoon over the clean lime mixture reserved before adding the raw prawns.
- Fluff the coconut rice with a fork and divide between two bowls. Top with the prawns, pineapple and avocado, then scatter over the fresh coriander. Serve straight away while the prawns are hot and the rice is warm.
Recipe notes
Tips
- Rinse the rice well so the coconut rice stays fluffy rather than sticky.
- Do not overcook the king prawns; take them off the heat as soon as they turn pink and opaque.
- Seafood safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the king prawns are cooked until fully opaque throughout.
Substitutions
- Replace jasmine rice with basmati rice for a slightly drier, more separate grain.
- Replace mild chili powder with smoked paprika for a gentler warmth and a smoky note.
- Replace fresh coriander with fresh mint for a different, cooling herbal finish.
Storage
- Refrigerate up to 2 days
- Store rice and prawns together in an airtight container; keep pineapple, avocado and fresh coriander separate if possible. Reheat the rice and prawns in a saucepan with a splash of water over low heat until piping hot, then add the fresh toppings.
