Cod and Chickpea Bowl with Lemon and Parsley
Why this recipe works
- Fast, practical cooking: Canned chickpeas and roasted peppers keep the prep short, while the cod cooks quickly in the pan.
- Bright but savoury: Lemon juice and zest sharpen the olive oil dressing without overpowering the mild fish and creamy chickpeas.
- Flexible serving temperature: The chickpea mixture holds well warm or at room temperature, making the bowl suitable for lunch, packed meals or a light supper.

Ingredient notes
- Choose firm cod fillets: Skinless cod fillets that feel firm and moist will flake cleanly once cooked and are easier to portion over the bowls.
- Drain the peppers well: Roasted peppers can carry extra brine or packing liquid, which can dilute the lemon and olive oil dressing.
- Adjust the lemon at the end: Taste the dressed chickpeas before serving and add a little more lemon if the bowl needs extra brightness.
Texture tips
- Keep the cod moist: Cook just until the fish turns opaque and flakes easily; leaving it in the pan too long can make it dry.
- Avoid watery chickpeas: Rinse and drain the chickpeas thoroughly so the dressing clings rather than pooling in the bowl.
Make-ahead tips
- Store fish separately: If preparing ahead, keep the cooked cod separate from the chickpea mixture to help preserve its texture.
- Reheat gently: Warm the chickpeas and peppers first, then add the cod briefly so it heats through without drying out.
Serving ideas
- Add bread or greens: Serve with crusty bread, a simple green salad or steamed greens if you want a more substantial meal.
- Finish with herbs: Extra parsley adds freshness, while fresh coriander gives the bowl a brighter, more aromatic finish.

Ingredients
Instructions
- Drain and rinse the chickpeas, then drain the roasted peppers and slice them. Finely grate or crush the garlic. Zest the lemon, then juice it.
- In a mixing bowl, whisk together the lemon juice, lemon zest, garlic, extra virgin olive oil, fine sea salt and black pepper. Taste and adjust with a pinch more salt or a squeeze more lemon if needed.
- Pat the cod dry and season lightly with a little of the salt and pepper from the measured amounts. Warm 1 tbsp of the oil from the dressing in a large frying pan over medium heat, then cook the cod for 2 to 3 minutes per side until opaque and it flakes easily. Transfer to a plate.
- Add the chickpeas and roasted peppers to the same pan and cook for 2 to 3 minutes, just to warm through. Tip them into the bowl with the dressing and toss to coat.
- Roughly chop the parsley and fold most of it through the chickpea mixture. Divide between two bowls, flake the cod over the top, and finish with the remaining parsley. Serve warm or at room temperature.
Recipe notes
Tips
- For the best texture, pat the cod dry before it goes into the pan so it sears rather than steams.
- If your roasted peppers are packed in brine, drain them well so the dressing stays bright and not watery.
- Fish is best served freshly cooked; if you are pregnant, elderly, or immunocompromised, make sure the cod is cooked until fully opaque and flakes easily.
Substitutions
- Replace Fresh parsley with Fresh coriander for a different herbal finish.
- Replace Canned roasted red peppers with Roma tomato, quickly warmed in the pan until just softened.
Storage
- Refrigerate up to 2 days
- Store in an airtight container in the fridge. For best results, keep the cod separate from the chickpea mixture if making ahead; reheat the chickpeas and peppers in a frying pan over medium heat until hot, then add the cod just to warm through so it does not dry out.
