Bacalhau com Grão Bowl (Cod with Chickpeas and Potatoes)
Why this recipe works
- Gentle poaching: Poaching the cod at a low simmer keeps the fish moist and easy to flake into generous pieces.
- Bright, balanced dressing: Lemon and white wine vinegar cut through the olive oil and chickpeas, keeping the bowl fresh rather than heavy.
- Good warm or room temperature: The potatoes and chickpeas hold the dressing well, so the bowl works for a freshly made lunch or a make-ahead meal.

Authenticity notes
- Traditional roots: Classic bacalhau com grão is commonly made with soaked salt cod, chickpeas, olive oil, vinegar and parsley.
- Fresh cod version: Using fresh cod makes this version quicker and milder while keeping the recognisable combination of fish, chickpeas and sharp dressing.
- Simple home-style serving: The dish is well suited to serving warm or at room temperature, which is part of its practical, everyday appeal.
Ingredient notes
- Choose firm cod: A firm, skinless cod fillet is easiest to poach and flake without falling apart too much.
- Rinse the chickpeas well: Rinsing canned chickpeas removes excess packing liquid and gives the dressing a cleaner flavour.
- Adjust the finish: Taste before serving and add a little extra lemon if the potatoes and chickpeas need more lift.
Common mistakes
- Boiling the cod: Keep the poaching water at a bare simmer; vigorous boiling can make the fish tough and break it into small pieces.
- Cooking the fish too long: Remove the cod once it is opaque and flakes cleanly, then let it rest briefly before folding it through the bowl.
- Overworking the flakes: Fold the cod in gently so some larger pieces remain, giving the bowl a better texture.
Make-ahead tips
- Prep components early: The potatoes, chickpeas and dressing can be prepared ahead, then combined with the cod and herbs closer to serving.
- Reheat gently: Warm leftovers with a small splash of water over low heat until piping hot, taking care not to overcook the fish.
- Freshest finish: Add the parsley just before serving so it stays bright and aromatic.
Equipment you'll need
Ingredients
Instructions
- Halve any larger potatoes so they cook evenly. Put them in a large pot, cover with cold water, add 1 tsp of the salt, and bring to the boil. Simmer for 12 to 15 minutes until tender, then drain.
- While the potatoes cook, pour the chickpeas into a colander, rinse well, and let them drain. Finely grate or crush the garlic, and finely chop the parsley. Juice the lemon.
- In a saucepan, add enough water to just cover the cod and bring it to a gentle simmer over low heat. Add the cod and poach for 6 to 8 minutes until opaque and it flakes easily. Lift out with tongs and rest for 2 minutes, then flake into large pieces.
- In a mixing bowl, whisk together the olive oil, white wine vinegar, garlic, lemon juice, remaining salt, and black pepper. Add the warm potatoes and chickpeas and toss to coat. Fold through the spinach so it just wilts from the heat.
- Gently fold in the flaked cod, keeping some larger pieces intact. Taste and adjust with a little more lemon juice if you like. Divide between two bowls and finish with the parsley.
Recipe notes
Tips
- Keep the poaching water at a bare simmer so the cod stays tender and doesn’t break up.
- If your cod fillet is thick, poach it a couple of minutes longer and check by gently pressing with a fork; it should flake cleanly.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the cod is cooked until fully opaque and piping hot throughout.
Substitutions
- Replace White wine vinegar with the same amount of Lemon for a softer, citrus-only dressing.
- Replace Baby spinach with the same amount of Fresh parsley for a more herb-forward bowl.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover, and refrigerate. Reheat gently in a saucepan with a small splash of water until piping hot, or eat at room temperature; add the parsley just before serving for the freshest flavour.
