Polvo à Lagareiro Tradicional (Roasted Octopus with Olive Oil)
Why this recipe works
- Tender then roasted: Simmering the octopus first makes it tender, while the final roast adds lightly bronzed edges without drying it out.
- Garlic-infused oil: The olive oil carries the flavour of the garlic through both the octopus and the potatoes, acting as the dish’s sauce.
- Potatoes that soak up flavour: Smashed roast potatoes split open so their rough edges crisp slightly and absorb the savoury pan juices.
- Fresh finish: Lemon and parsley cut through the richness of the olive oil and keep the finished dish lively.

Timing notes
- Most of the time is inactive: The octopus needs a steady simmer before roasting, but the hands-on work is mostly trimming, slicing garlic and finishing the tray.
- Serve straight away: This dish is best served hot from the oven while the potatoes are crisp-edged and the garlic oil is still fragrant.
Authenticity notes
- Lagareiro style: The defining feature is the generous use of olive oil with garlic, usually served with smashed potatoes that absorb the oil.
- Potatoes are essential: The roasted new potatoes are more than a side; they are part of the dish’s structure and help balance the richness of the octopus and oil.
Common mistakes
- Boiling too hard: Keep the octopus at a gentle simmer. A vigorous boil can make the texture less tender.
- Letting the garlic catch: Garlic can burn quickly in a hot oven, so tuck it into the oil and between the potatoes if it starts colouring too fast.
- Roasting wet octopus: Drain the octopus well before adding it to the roasting pan so the edges can bronze rather than steam.
Ingredient notes
- Use good olive oil: Extra virgin olive oil is central to the flavour, so use one you enjoy tasting rather than a neutral cooking oil.
- Choose even-sized potatoes: Similar-sized new potatoes roast at the same rate and smash more evenly.
- Add lemon at the end: Squeeze over lemon just before serving to keep the flavour bright and fresh rather than muted by roasting.

Instructions
- Heat the oven to 220°C (430°F). Rinse the octopus under cold water and check the beak has been removed. Fill a large pot with water, add the bay leaves and white wine vinegar, and bring to a gentle simmer.
- Lower the octopus into the simmering water, then keep it at a steady simmer until a knife slides into the thickest part of a tentacle with little resistance. Start checking at 45 minutes; it may take 60 to 75 minutes depending on size. Lift out and drain well in a colander.
- While the octopus cooks, scrub the new potatoes and put them in a roasting pan. Drizzle with about 2 tbsp of the extra virgin olive oil and season with 1 tsp of the fine sea salt and 0.5 tsp of the black pepper. Roast for 35 to 45 minutes, turning once, until deeply golden and tender.
- Peel and thinly slice the garlic. Cut the drained octopus into large pieces, keeping the tentacles in generous lengths. When the potatoes are tender, lightly smash each one with the back of a spoon so they split and open.
- Nestle the octopus among the smashed potatoes. Scatter over the garlic, then pour over the remaining extra virgin olive oil and season with the remaining fine sea salt and black pepper. Roast for 12 to 15 minutes until the garlic is fragrant and just turning pale gold and the octopus edges are lightly bronzed.
- Finely chop the fresh parsley and zest the lemon, then cut the lemon into wedges. Sprinkle the parsley and lemon zest over the hot tray and squeeze over a little lemon juice to taste. Serve straight away with the lemon wedges for squeezing and spoon the garlicky oil over everything.
Recipe notes
Tips
- Keep the octopus at a gentle simmer rather than a hard boil so it stays tender.
- If the garlic starts to colour too quickly in the oven, stir it through the oil and tuck it between the potatoes so it softens without burning.
- If serving vulnerable groups, make sure the octopus is cooked until fully tender and piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh coriander for a different herbal finish.
- Replace White wine vinegar with Lemon juice for a brighter, softer acidity.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat in a 200°C (390°F) oven with any pan juices until piping hot, 10 to 15 minutes; add a fresh squeeze of lemon just before serving.
