Insalata di Polpo (Italian Octopus and Potato Salad)
Why this recipe works
- Tender seafood, firm potatoes: Soft slices of octopus contrast with waxy potatoes that hold their shape after boiling.
- Bright but savoury dressing: Lemon juice cuts through the olive oil and seafood richness without overwhelming the clean flavour of the octopus.
- Improves as it rests: A short standing time lets the warm potatoes absorb the dressing and helps the flavours settle before serving.

Ingredient notes
- Use waxy potatoes: New potatoes are ideal because they stay firm and creamy rather than collapsing into the dressing.
- Choose good olive oil: With so few ingredients, a fresh extra virgin olive oil gives the dressing its rounded, peppery finish.
- Refresh before serving: If the salad has been chilled, a little extra lemon just before serving can bring back its brightness.
Common mistakes
- Boiling too hard: Keep the octopus at a gentle simmer; vigorous boiling can toughen the flesh and cause the skin to shred.
- Letting the potatoes go too far: Cook the potatoes until tender but intact so they absorb the dressing without breaking apart.
- Mixing too roughly: Toss gently while the potatoes are warm to coat everything without turning the salad starchy.
Make-ahead tips
- Prepare earlier in the day: The salad can be cooked and dressed ahead, then kept chilled until closer to serving.
- Bring back to room temperature: If refrigerated, let it stand for 20 to 30 minutes before serving so the olive oil loosens and the flavours open up.
- Best texture on the day: It keeps for up to 2 days, but the potatoes and parsley are freshest on the day the salad is made.
Serving ideas
- Serve with simple sides: Pair with bitter leaves, grilled vegetables or a crisp green salad for a light Italian-style meal.
- Wine pairing: A crisp dry white wine works well with the lemon, parsley and delicate seafood flavour.
- Finish cleanly: Add the reserved parsley just before serving for colour and a fresh herbal lift.

Instructions
- Put the octopus in a large pot with the celery, bay leaves and black peppercorns. Cover with cold water and bring to a gentle simmer, skimming any foam. Simmer 45 to 60 minutes until a knife slides easily into the thickest part of a tentacle.
- Turn off the heat and leave the octopus to cool in the cooking liquid for 10 minutes to stay juicy. Lift it out to a board and let it cool until comfortable to handle. Slice the tentacles into bite-sized pieces and cut the body into strips.
- While the octopus cooks, boil the new potatoes in well-salted water for 15 to 20 minutes until tender. Drain well, then leave for 2 minutes so the steam dries them slightly. Halve or quarter them while still warm.
- Finely grate or crush the garlic into a mixing bowl. Add the lemon juice, extra virgin olive oil and 1 tsp of the fine sea salt, then whisk until lightly emulsified. Taste and adjust with more salt if needed.
- Add the warm potatoes and sliced octopus to the bowl and toss gently so everything is glossy and well coated. Finely chop the fresh parsley and fold most of it through, reserving a little for the top. Leave 10 minutes for the flavours to settle, then serve at room temperature with the remaining parsley scattered over.
Recipe notes
Tips
- Keep the simmer very gentle; a hard boil can make the octopus tough and cause the skin to shred.
- If serving later, toss the salad once more just before plating so the dressing is evenly distributed.
- Food safety: if you are pregnant, elderly, or immunocompromised, ensure the octopus is cooked until fully tender and piping hot before cooling and serving.
Substitutions
- Replace lemon with lime for a slightly sharper, more aromatic dressing.
- Replace fresh parsley with fresh mint for a different, summery herbal finish.
- Replace extra virgin olive oil with olive oil for a milder flavour.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container. Bring back to room temperature for 20 to 30 minutes before serving, or refresh with a squeeze of lemon and a drizzle of extra virgin olive oil.
