Dutch Veg Bowl with Beetroot, Potatoes and Dill Yoghurt

A Dutch-style vegetable bowl brings together the earthy, comforting flavours often associated with potatoes, beetroot and dill in a fresh lunch format. Tender baby potatoes form the base, with roasted beetroot and carrots adding sweetness, colour and lightly caramelised edges. Cool Greek yoghurt stirred with dill softens the richness of the roots, while quick-pickled red onion cuts through with acidity and walnuts add a crisp, nutty finish. It is filling without feeling heavy, easy to assemble, and well suited to preparing the components ahead before dressing and topping just before serving.

Why this recipe works

  • Layered textures: Tender potatoes and roasted vegetables are balanced by crunchy walnuts and sharp pickled onion.
  • Fresh contrast: Apple cider vinegar and dill yoghurt cut through the sweetness of the beetroot and carrots.
  • Good for planned lunches: The cooked vegetables, dressing and pickled onion can be stored separately, then assembled when needed.

Ingredient notes

  • Keep the colours distinct: Roast the beetroot and carrots in separate piles on the same tray if you want the carrots to stay brighter.
  • Use firm baby potatoes: Small, waxy potatoes hold their shape well after boiling and give the bowl a more substantial texture.
  • Fresh dill works best: Fresh dill gives the yoghurt a clean, grassy flavour; dried dill will taste flatter in this simple dressing.

Make-ahead tips

  • Store in parts: Keep the potatoes and roasted vegetables separate from the dill yoghurt, pickled onion and walnuts to preserve the best texture.
  • Reheat before topping: Warm the vegetables in a 200°C (390°F) oven until piping hot, then add the cold dressing, onion and nuts just before serving.

Texture tips

  • Steam-dry the potatoes: Let the drained potatoes sit briefly before halving so excess moisture evaporates and the bowl does not become watery.
  • Keep the dressing spoonable: Use cold Greek yoghurt and stir it gently with the dill rather than whisking hard, which can loosen the texture.

  1. Heat the oven to 220°C (430°F). Scrub the potatoes and put them in a large pot of salted water, then bring to the boil.
  2. Peel the beetroot and carrots, then cut them into bite-size chunks. Toss them on a baking tray with the olive oil, half the salt and the pepper.
  3. Roast the beetroot and carrots for 25 to 30 minutes, turning once, until tender and lightly caramelised at the edges. If the tray looks dry, add a small splash of water to help them finish cooking without burning.
  4. Simmer the potatoes for 12 to 15 minutes until a knife slides in easily, then drain well. Let them steam-dry for 2 minutes, then halve any larger potatoes.
  5. Thinly slice the red onion and place it in a bowl with the apple cider vinegar and the remaining salt. Scrunch with your hands for 30 seconds, then leave to pickle while you make the dressing.
  6. Finely chop the dill and stir it into the Greek yogurt. Taste and season with a pinch more pepper if you like.
  7. Roughly chop the walnuts. Divide the potatoes between two bowls, top with the roasted beetroot and carrots, then spoon over the dill yogurt and scatter with the pickled onion and walnuts.

Recipe notes

Tips

  • Roast the beetroot and carrots on the same tray but keep them in separate piles if you want the carrots to stay brighter in colour.
  • For a thicker, more spoonable dressing, use the Greek yogurt straight from the fridge and stir it briefly rather than whisking hard.
  • If serving to anyone vulnerable, make sure the vegetables are cooked until fully tender and serve the bowl promptly rather than leaving it at room temperature.

Substitutions

  • Replace Apple cider vinegar with white wine vinegar for a slightly sharper pickle.
  • Replace Walnuts with hazelnuts for a different crunch and a toastier flavour.
  • Replace Fresh dill with fresh chives for a milder, oniony dressing.

Storage

  • Refrigerate up to 3 days
  • Store the potatoes and roasted vegetables in an airtight container in the fridge, and keep the dill yogurt and pickled onion separate. Reheat the vegetables in a 200°C (390°F) oven for 10 to 12 minutes until piping hot, then add the cold dressing and toppings just before serving.
