Muffuletta Sandwich with Olive Salad
Why this recipe works
- Bold layered flavour: Salty cured meats, mild provolone and sharp olive salad create a full, savoury sandwich without any cooking.
- Chunky olive salad: Keeping the olives roughly chopped gives the filling bite and prevents the salad from turning heavy or paste-like.
- Built for sharing: A large round loaf can be pressed, sliced into wedges and served easily for casual meals or gatherings.

Timing notes
- Let it rest before slicing: Pressing the sandwich for the full resting time helps the olive oil, vinegar and briny juices season the bread and hold the layers together.
- Serve at room temperature: The flavours are clearer and the bread is softer when the sandwich is not fridge-cold.
Ingredient notes
- Choose a sturdy round loaf: The bread needs enough structure to hold the olive salad and deli meats without collapsing once pressed.
- Keep the olives textured: A rough chop gives the salad the classic chunky feel and helps distribute the briny dressing through the sandwich.
Authenticity notes
- New Orleans style: The muffuletta is recognised by its round loaf, Italian-style cured meats, cheese and generous olive salad.
- Slice into wedges: Rather than individual rolls, a muffuletta is commonly served as one large sandwich cut into portions.
Make-ahead tips
- Make the olive salad ahead: The olive mixture can be prepared in advance and kept chilled, allowing the oregano, vinegar and oil to meld.
- Assemble close to serving for best texture: If preparing well ahead, keep the bread and olive salad separate until needed to avoid an overly soft crumb.

Instructions
- Make the olive salad: roughly chop the green pitted olives and the Greek marinated olive mix, then tip into a mixing bowl. Stir in the extra virgin olive oil, red wine vinegar, dried oregano and black pepper until glossy and well combined.
- Using a bread knife, cut the Tuscan country bread in half horizontally. If the loaf is very bready, pull out a little of the soft interior from both halves to make room for the filling.
- Layer the bottom half with half the provolone cheese, then add the cured salami, mortadella and cured ham in even folds. Spoon the olive salad generously over the meats, then finish with the remaining provolone cheese and close the sandwich.
- Press the sandwich firmly, then weigh it down with a heavy pan or a few tins and leave at room temperature so the flavours soak into the bread. Rest for 10 minutes, then cut into wedges and serve.
Recipe notes
Tips
- Chop the olives fairly chunky so the salad stays textured and does not turn into a paste.
- For cleaner slices, press the sandwich, then cut with a long sawing motion using a sharp bread knife.
Substitutions
- Replace red wine vinegar with sherry vinegar for a slightly rounder, less sharp tang.
- Replace provolone cheese with mozzarella for a milder, creamier finish.
Storage
- Refrigerate up to 2 days
- Wrap leftovers well and refrigerate. Eat cold, or let it sit at room temperature for 15 minutes before serving so the bread softens slightly; the olive salad will continue to soak in over time.
