Air Fryer Sweet and Sour Chicken
Why this recipe works
- Crisp without deep-frying: A light cornflour coating helps the chicken brown and crisp in the air fryer while keeping the method simpler and cleaner.
- Balanced sweet and sour sauce: Pineapple juice and brown sugar bring sweetness, while rice vinegar and soy sauce add tang and savoury depth.
- Efficient cooking: The rice, chicken and sauce can be prepared in parallel, making the dish practical for a weeknight dinner.

Texture tips
- For crisper chicken: Arrange the chicken in a single layer in the air fryer and cook in batches if needed so the pieces crisp rather than steam.
- Sauce at the end: Toss the chicken through the sauce just before serving so the coating keeps some texture.
Ingredient notes
- Use chicken thighs: Boneless, skinless thighs stay juicy in the air fryer and suit the bold sweet and sour sauce.
- Adjust the tang: Rice vinegar keeps the sauce bright; Chinese black vinegar gives a deeper, maltier sharpness if preferred.
- Keep the pepper bright: Add the red pepper near the end so it warms through without losing all of its bite.
Ingredient swaps
- Swap the vinegar: Chinese black vinegar can replace rice vinegar for a darker, more savoury-tangy sauce.
- Change the fruit: Mango can stand in for pineapple for a softer, sweeter fruit note.
Make-ahead tips
- Prep ahead: Slice the vegetables and whisk the sauce ingredients in advance, then cook the chicken fresh for the best texture.
- Best served straight away: The coating is at its crispest as soon as the chicken is tossed with the sauce.
- Reheating: Reheat the chicken and sauce gently with a splash of water until piping hot, and store and reheat the rice separately.

Instructions
- Rinse the jasmine rice until the water runs mostly clear, then put it in a saucepan with the water. Bring to the boil, cover, then cook on the lowest heat for 10 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
- Meanwhile, cut the chicken into bite-sized pieces and put in a mixing bowl with the light soy sauce and toasted sesame oil. Add the cornflour and toss until every piece is lightly coated. Cut the red pepper into bite-sized pieces and slice the spring onions.
- Heat the air fryer to 200°C (390°F). Arrange the chicken in a single layer and air-fry for 10 to 12 minutes, shaking halfway, until golden and cooked through. Cook in batches if needed so the chicken crisps rather than steams.
- While the chicken cooks, whisk the pineapple juice, rice vinegar, ketchup and brown sugar in a saucepan. Bring to a simmer over medium heat and cook for 3 to 5 minutes, whisking, until glossy and slightly thickened. Add the red pepper and pineapple and simmer for 2 minutes until warmed through but still bright.
- Add the air-fried chicken to the saucepan and toss to coat thoroughly. Cook for 1 minute so the sauce clings to the chicken. Sprinkle over the spring onions and serve straight away with the jasmine rice.
Recipe notes
Tips
- For maximum crispness, keep the chicken in a single layer in the air fryer and cook in batches; overcrowding makes the coating go soft.
- If the sauce thickens too much, whisk in a splash of water to loosen it and bring it back to a gentle simmer.
Substitutions
- Replace rice vinegar with Chinese black vinegar for a deeper, maltier tang.
- Replace pineapple with mango for a softer, sweeter fruit note.
Storage
- Refrigerate up to 3 days
- Cool and refrigerate in an airtight container. Reheat the chicken and sauce in a saucepan over medium-low heat with a splash of water until piping hot; the coating will soften on storage. Store rice separately and reheat with a tablespoon of water, covered, until steaming.
