Air Fryer Sesame Chicken
Why this recipe works
- Light crisp coating: Cornflour coats the chicken pieces thinly, helping them turn golden and crisp in the air fryer without deep-frying.
- Balanced glaze: Honey, soy sauce and toasted sesame oil create sweetness and savoury depth, while rice vinegar keeps the sauce from tasting heavy.
- Weeknight-friendly method: The chicken cooks quickly in the air fryer while the sauce comes together in a saucepan, keeping the overall cooking time manageable.

Texture tips
- Cook in batches if needed: Leave space around the chicken pieces in the air-fryer basket so the coating can crisp rather than steam.
- Sauce just before serving: Toss the chicken with the glaze at the end and serve promptly; the coating naturally softens once coated.
Ingredient notes
- Cornflour coating: Shake off loose cornflour before air-frying so the coating stays even and does not catch on the basket.
- Use toasted sesame oil: Toasted sesame oil gives the sauce its nutty aroma, so use it as a flavouring ingredient rather than a neutral cooking oil.
Common mistakes
- Do not boil the glaze hard: Once thickened, keep the sauce gentle; high heat can make it reduce too quickly and become sticky or tight.
- Add the slurry smoothly: Whisk the cornflour with water before adding it to the sauce so the glaze thickens evenly without clumps.
Make-ahead tips
- Best way to reheat: Reheat leftovers in a 200°C (390°F) oven until piping hot to help bring back some crisp edges.
- Best served fresh: The chicken keeps well in the fridge, but the texture is at its crispest immediately after air-frying and glazing.

Ingredients
Instructions
- Cut the chicken thighs into bite-size pieces. Thinly slice the spring onion and set aside. Finely grate the ginger and crush the garlic.
- Put the chicken in a mixing bowl and toss with the cornflour until evenly coated. Drizzle over 5 ml of the sesame oil and toss again so the coating turns lightly sandy rather than wet. Preheat the air fryer to 200°C (390°F) for 3 minutes.
- Air-fry the chicken at 200°C (390°F) for 14–16 minutes, shaking halfway, until golden and cooked through. If your basket is small, cook in batches to keep the pieces crisp. Transfer the chicken to a clean bowl.
- In a saucepan, whisk together the light soy sauce, honey, rice vinegar, grated ginger, crushed garlic and the remaining sesame oil. Bring to a gentle simmer over medium heat and cook for 2–3 minutes, stirring, until glossy and well combined. Lower the heat.
- Whisk 2 tbsp water into 2 tsp of the cornflour from your measured amount to make a smooth slurry. Stir the slurry into the simmering sauce and cook for 30–60 seconds until it lightly thickens and clings to a spoon. Take off the heat.
- Add the chicken to the saucepan and toss until evenly coated. Scatter over the roasted sesame seeds and spring onion, then toss once more and serve straight away. If you want extra crunch, add the sesame seeds at the table rather than in the pan.
Recipe notes
Tips
- For an even crisp coating, shake off any loose cornflour before air-frying so it does not burn on the basket.
- Keep the sauce at a gentle simmer once thickened; a hard boil can make it tighten too quickly and stick to the pan.
- Food safety: make sure the chicken is cooked through with no pink remaining and the juices run clear.
Substitutions
- Replace honey with caster sugar for a cleaner sweetness; start with 45 g and add more to taste.
- Replace rice vinegar with apple-cider-vinegar for a slightly fruitier tang.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in an airtight container. Reheat in a 200°C (390°F) oven for 8–10 minutes until piping hot; the coating softens once sauced, but the oven helps restore some crisp edges.
