Maqluba (Palestinian Upside-Down Rice with Chicken and Vegetables)
Why this recipe works
- Layered savoury flavour: Browning the chicken and vegetables before assembly gives the rice a deeper, more rounded flavour as it cooks.
- Built for the turn-out: Layering the chicken and vegetables beneath the rice creates the recognisable upside-down presentation when the pot is inverted.
- Fragrant and satisfying: Basmati rice absorbs the spiced cooking liquid, producing tender grains with warm cinnamon, allspice and chicken richness.

Timing notes
- Rest before flipping: Keep the pot covered for the full resting time so the rice firms up slightly and the layers hold together more cleanly.
- Best served after turning out: Invert the maqluba shortly before serving, then scatter over the toasted pine nuts so they stay crisp.
Authenticity notes
- Upside-down presentation: The defining feature of maqluba is the layered pot that is flipped onto a platter, revealing the chicken, vegetables and rice.
- Vegetable variations: Aubergine and cauliflower are classic choices, though different households may vary the vegetables depending on preference and availability.
Common mistakes
- Too much liquid: Add only enough hot cooking liquid to sit just above the rice; excess liquid can make the finished dish heavy rather than neatly layered.
- Heat too high after layering: Once assembled, keep the pot on low heat so the rice cooks through without catching on the bottom.
- Flipping too soon: Turning the pot out immediately after cooking can cause the layers to collapse, so allow the rice to rest first.
Make-ahead tips
- Prepare the components: The rice can be rinsed and drained, and the vegetables cut ahead of cooking to make assembly smoother.
- Reheat gently: Reheat leftovers covered with a splash of water until piping hot, either on the hob or in a 180°C (355°F) oven.
- Freeze in portions: Cooked maqluba freezes well in portions; defrost overnight in the fridge before reheating thoroughly.

Ingredients
Instructions
- Rinse the rice in a bowl of cold water until the water runs mostly clear, then drain well in a colander. Peel and slice the onion. Cut the aubergine into thick rounds and break the cauliflower into medium florets.
- Heat 1 tbsp of the sunflower oil in a frying pan over medium heat and toast the pine nuts for 2 to 3 minutes, stirring, until golden. Tip onto a plate straight away so they do not over-brown. Wipe out the pan.
- Return the pan to medium-high heat with 2 tbsp of the sunflower oil. Fry the aubergine in batches for 3 to 4 minutes per side until deeply golden, adding a little more oil if needed. Transfer to a plate.
- Add 1 tbsp of the sunflower oil to the pan and fry the cauliflower for 6 to 8 minutes, turning occasionally, until well browned in spots. Transfer to the plate with the aubergine. Season the vegetables lightly with a pinch of the fine sea salt from the measured amount.
- In a dutch oven over medium-high heat, warm the remaining 1 tbsp sunflower oil. Season the chicken thighs with the remaining fine sea salt, black pepper, ground cinnamon and allspice, then brown for 4 to 5 minutes per side. Add the onion and cook for 3 minutes until starting to soften.
- Pour in 900 ml water and bring to a gentle simmer, scraping up any browned bits. Simmer for 20 minutes until the chicken is just cooked through. Lift the chicken onto a plate with tongs and keep the cooking liquid in the pot.
- Arrange the chicken in the base of the pot, then layer over the aubergine and cauliflower. Scatter the drained rice evenly over the top, then press down gently with the back of a spoon to level. Pour in enough of the hot cooking liquid to cover the rice by about 1.5 cm; if you are short, top up with a little water.
- Bring the pot back to a gentle simmer, then cover and cook on low for 30 to 35 minutes until the rice is tender and the liquid is absorbed. Turn off the heat and rest, covered, for 15 minutes to help it set. Run a spoon around the edge, then invert onto a large platter and top with the toasted pine nuts.
Recipe notes
Tips
- For a clean flip, rest the pot for the full 15 minutes, then place the serving platter firmly on top and turn both over in one confident movement.
- If you are serving anyone who is vulnerable, make sure the chicken is cooked until piping hot throughout with no pink at the thickest part.
Substitutions
- Replace pine nuts with pistachios for a slightly sweeter, richer topping.
- Replace chicken thighs with chicken drumsticks for a similar cooking time and flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container. Reheat in a covered saucepan with a splash of water over low heat until piping hot, or in a 180°C (355°F) oven, covered, for 20 to 25 minutes. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
