Teriyaki Chicken Poke Bowl

A poke bowl is a composed rice bowl, usually served with neatly arranged toppings that bring freshness, savoury depth and texture to each bite. In this chicken version, seasoned sushi rice forms the base for glossy teriyaki-coated thigh meat, crisp cucumber, sweet carrot and tender edamame. Nori, spring onion and roasted sesame seeds add the familiar umami notes associated with Japanese-style rice bowls, while pickled ginger keeps the finish bright. It is a flexible lunch or light dinner: satisfying enough to feel complete, but still fresh, colourful and easy to assemble.

Why this recipe works

  • Fresh texture contrast: Warm rice and glossy chicken are balanced by crisp cucumber, carrot, edamame and shredded nori.
  • Balanced sweetness: Rice vinegar and pickled ginger cut through the sweet teriyaki glaze, keeping the bowl bright rather than heavy.
  • Fast bowl format: The rice cooks first while the toppings and chicken are prepared, making the workflow efficient for a weekday lunch or dinner.

Timing notes

  • Let the rice rest: Keeping the rice covered after cooking allows it to finish steaming and settle before seasoning.
  • Serve slightly warm: The bowl works best when the rice is warm rather than hot, so the cucumber and carrot stay crisp.

Ingredient notes

  • Chicken thighs stay juicy: Boneless, skinless thighs are well suited to quick pan-cooking and hold up well to the teriyaki glaze.
  • Rinse the sushi rice: Rinsing removes excess surface starch, helping the rice cook up glossy and distinct rather than heavy.
  • Add nori at the end: Scatter the nori over the finished bowl so it keeps its savoury aroma and does not soften too quickly.

Ingredient swaps

  • Use chicken breast: Chicken breast can replace thighs for a leaner bowl; cook it gently and avoid overcooking so it stays tender.
  • Swap the vinegar: White wine vinegar can stand in for rice vinegar, giving the rice a slightly sharper seasoning.

Make-ahead tips

  • Keep components separate: Store rice, chicken and vegetables in separate airtight containers so the fresh toppings stay crisp.
  • Reheat the chicken carefully: Warm the chicken in a frying pan with a small splash of water until piping hot, then assemble with the cold vegetables.

  1. Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, covered, for 10 minutes.
  2. Tip the rice into a mixing bowl and drizzle over the rice vinegar. Fold gently to coat, then spread the rice out a little so it cools to warm room temperature while you prepare the toppings.
  3. Bring a small saucepan of water to the boil and cook the edamame for 2 minutes, or until tender. Drain well and set aside.
  4. Slice the chicken into bite-sized pieces. Heat a frying pan over medium-high heat, add the chicken and cook for 5 to 6 minutes, turning, until cooked through and lightly coloured. Pour in about two-thirds of the teriyaki sauce and simmer for 1 to 2 minutes until glossy and coating the chicken.
  5. Halve the cucumber lengthways and slice. Peel the carrot, then cut into fine matchsticks; thinly slice the spring onion. Cut or snip the nori into thin strips.
  6. Divide the rice between two bowls. Top with cucumber, edamame, carrot and the teriyaki chicken, then sprinkle over the spring onion, nori and roasted sesame seeds. Drizzle with the remaining teriyaki sauce and serve with pickled ginger on the side.

Recipe notes

Tips

  • For neater bowls, cool the rice to just warm before topping so the cucumber and carrot stay crisp.
  • If using chicken thighs straight from the fridge, let them sit at room temperature for 10 minutes so they cook more evenly.

Substitutions

  • Replace rice vinegar with white wine vinegar for a slightly sharper seasoning.
  • Replace chicken thighs with chicken breast for a leaner bowl; reduce the cooking time slightly to avoid drying it out.

Storage

  • Refrigerate up to 2 days
  • Store rice and toppings in separate airtight containers. Reheat the chicken until piping hot in a frying pan with a splash of water, and assemble with the cold vegetables just before serving.
