Cheeseburger Salad with Minced Beef and Pickles
Why this recipe works
- Burger flavour with fresh crunch: Warm cheesy beef contrasts with crisp lettuce, firm tomatoes and sharp dill pickles.
- Tangy dressing: Mustard, vinegar and pickles cut through the richness of the beef, mayonnaise and Cheddar.
- Fast weeknight method: The beef cooks quickly in one pan while the salad and dressing are prepared alongside.

Make-ahead tips
- Keep components separate: Store the cooked beef, lettuce, tomatoes, pickles and dressing in separate airtight containers to keep the salad crisp.
- Reheat before assembling: Warm the beef in a frying pan over medium heat until piping hot, then let it stand briefly before spooning it over the lettuce.
- Assemble just before serving: Once dressed, the salad is best eaten straight away so the leaves do not soften.
Common mistakes
- Adding hot beef too soon: Let the beef cool for a short moment before topping the lettuce so the leaves stay crisp rather than wilted.
- Not browning the beef properly: Cook the mince until the liquid has evaporated; beef that is still wet can dilute the dressing and soften the salad.
- Forgetting the salty ingredients: Pickles, mustard and Cheddar already bring saltiness, so taste the dressing before adding more seasoning.
Ingredient notes
- Choose sturdy lettuce: Romaine works well because it holds its crunch under warm toppings; iceberg is a good option for an even crisper bite.
- Use firm tomatoes: Ripe but firm tomatoes add freshness without releasing too much juice into the bowl.
- Mind the cheese melt: Cheddar gives a classic burger flavour, while milder melting cheeses such as Monterey Jack will make the salad softer and less sharp.

Instructions
- Wash and dry the romaine lettuce, then chop it into bite-sized pieces. Chop the tomatoes and slice the dill pickles. Divide the lettuce between two bowls and set aside.
- In a small bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, ground garlic, fine sea salt and black pepper until smooth. Taste and adjust seasoning if needed. Set the dressing aside.
- Peel and finely chop the yellow onion. Heat a frying pan over medium-high heat, add the onion and cook for 2 minutes until starting to soften. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated.
- Reduce the heat to low and scatter the Cheddar cheese over the beef. Cover the pan and leave for 1 to 2 minutes until the cheese melts. Remove from the heat.
- Spoon the cheesy beef over the lettuce, then add the tomatoes and dill pickles. Drizzle with the dressing and serve straight away. If you like, toss gently just before eating.

Tips
- For the best texture, let the beef cool for 2 minutes before spooning it over the lettuce so the leaves stay crisp.
- If your pan is very lean and the beef starts to catch, add a small splash of water and keep stirring until it evaporates.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised mayonnaise.
Substitutions
- Replace Cheddar cheese with Monterey Jack cheese for a milder melt.
- Replace apple cider vinegar with white wine vinegar for a slightly sharper dressing.
- Replace romaine lettuce with iceberg lettuce for extra crunch.
