Lentil Salad with Mustard Vinaigrette and Smoked Duck
Why this recipe works
- Sharp, balanced dressing: Dijon mustard and red wine vinegar cut through the richness of the smoked duck without overwhelming the lentils.
- Defined lentil texture: Green lentils hold their shape well, giving the salad a firm, satisfying bite rather than a soft or mushy finish.
- Flexible serving temperature: The salad works slightly warm or at room temperature, so it suits lunch, light dinners or prepared-ahead serving.

Timing notes
- Best served warm or room temperature: Dress the lentils while they are still warm, then serve soon after or let them settle to room temperature.
- Use the simmering time: Chop the shallot and parsley and whisk the vinaigrette while the lentils cook to keep the workflow efficient.
Texture tips
- Keep the lentils distinct: Stop cooking when the lentils are tender but still intact; overcooked lentils will make the salad heavy.
- Steam-dry after draining: Letting the lentils sit briefly in the sieve removes excess water and helps the vinaigrette cling properly.
Ingredient notes
- Choose lentils that hold their shape: Green lentils are ideal here because they stay firm after simmering and suit vinaigrette-based salads.
- Use good Dijon mustard: Dijon is central to the dressing, so its sharpness and smooth texture matter more than in a background seasoning.
Make-ahead tips
- Store lentils and duck apart: Keep the dressed lentils and smoked duck in separate airtight containers so the duck keeps its texture.
- Warm gently before serving: If chilled, gently warm the lentils with a splash of water, then add the duck just before serving.

Instructions
- Rinse the lentils, then tip into a saucepan and cover with plenty of cold water. Bring to the boil, add half the fine sea salt, then simmer for 18 to 22 minutes until tender but still holding their shape. Drain well in a sieve and let them steam-dry for 2 minutes.
- Meanwhile, finely chop the shallot and parsley. In a mixing bowl, whisk together the dijon mustard, red wine vinegar, extra virgin olive oil, remaining fine sea salt and black pepper until emulsified. Taste and adjust seasoning if needed.
- While the lentils are still warm, toss them with the vinaigrette and the chopped shallot. Warm a frying-pan over a low heat and briefly warm the smoked duck breast for 30 to 60 seconds per side, just to take the chill off, then slice thinly. Fold most of the parsley through the lentils, top with the duck, and finish with the remaining parsley; serve slightly warm or at room temperature.
Recipe notes
Tips
- Do not overcook the lentils: they should be tender but not mushy, so the salad stays light and distinct.
- Tossing the lentils while warm helps them absorb the mustard vinaigrette more evenly.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the smoked duck is heated until piping hot throughout.
Substitutions
- Replace red wine vinegar with white wine vinegar for a slightly softer acidity.
- Replace dijon mustard with whole-grain mustard for a more textured vinaigrette.
Storage
- Refrigerate up to 2 days
- Store the lentils and duck separately in airtight containers for the best texture. Serve at room temperature, or gently warm the lentils in a saucepan with a splash of water, then add the duck just before serving.
