Pad Thai-Style Courgette Noodle Bowl with Prawns

Inspired by Thailand’s much-loved tamarind noodle stir-fry, this bowl keeps the familiar sweet-sour-salty profile while using courgette ribbons in place of rice noodles. The result is lighter and fresher, with just-cooked prawns, soft scrambled egg, crisp beansprouts and a glossy sauce made with tamarind paste, fish sauce, palm sugar and lime. Crushed roasted peanuts and spring onion add the recognisable crunch and savoury finish, making it a quick lunch that still delivers the tang, nuttiness and lively texture associated with Pad Thai.

Why this recipe works

  • Sweet-sour balance: Tamarind, lime, fish sauce and palm sugar create the tangy, savoury and lightly sweet profile that defines the dish.
  • Fast wok cooking: Prawns, egg and courgette ribbons cook in minutes, making the bowl practical for a quick lunch or light dinner.
  • Fresh crunch: Beansprouts and roasted peanuts contrast with the tender prawns, soft egg and glossy courgette ribbons.

Adjust the heat

  • Keep it mild: Leave out the chilli flakes and rely on lime for brightness rather than heat.
  • Add more heat: Increase the chilli flakes or stir a little sriracha into the sauce to taste.
  • Balance the spice: If the sauce tastes too sharp or fiery, a little extra palm sugar or brown sugar will soften the edges.

Ingredient notes

  • Choose firm courgettes: Firm courgettes make cleaner ribbons and hold their bite better during the brief stir-fry.
  • Use raw prawns: Raw peeled prawns are best here because they cook quickly and stay juicier than reheated cooked prawns.
  • Grate hard palm sugar: Grating hard palm sugar helps it dissolve smoothly into the tamarind and fish sauce.

Texture tips

  • Avoid watery courgette: Toss the courgette ribbons only briefly so they warm through while staying crisp-tender.
  • Watch the prawns: Remove the prawns once they are pink and opaque, then return them near the end so they do not become rubbery.
  • Keep the topping crisp: Add the crushed peanuts just before serving so they retain their crunch.

Common mistakes

  • Cooking the courgette too long: Courgette ribbons soften quickly; extended cooking will make the bowl loose and watery.
  • Adding the sauce too early: Pour in the tamarind sauce only once the prawns, egg, courgette and beansprouts are ready to toss together.
  • Serving before the egg is set: Scramble the egg until just set before adding the prawns back to the pan.

  1. Trim the courgettes, then use a julienne peeler or grater attachment to make long ribbons. Finely grate the garlic, and thinly slice the spring onions. Crush the peanuts and cut the lime into wedges.
  2. In a small bowl, whisk together the tamarind paste, fish sauce, palm sugar and the juice of half the lime until the sugar dissolves. Stir in the chilli flakes, if using. Set the sauce by the hob.
  3. Heat a wok or large frying pan over medium-high heat. Add the prawns and cook for 2 to 3 minutes, tossing, until pink and just cooked through. Tip them onto a plate.
  4. Lower the heat to medium and add the garlic and most of the spring onion, keeping a little back for serving. Crack in the eggs and scramble for 1 to 2 minutes until just set. Return the prawns to the pan.
  5. Add the courgette ribbons and bean sprouts, then pour in the tamarind sauce. Toss for 1 to 2 minutes until everything is glossy and the courgette is warmed through but still has bite. Taste and squeeze in a little more lime if you like it sharper.
  6. Divide between two bowls. Top with the crushed peanuts and the reserved spring onion, and serve with the remaining lime wedges for squeezing over.

Recipe notes

Tips

  • Keep the courgette ribbons moving in the pan and cook them briefly so they stay crisp-tender rather than watery.
  • If your palm sugar is very hard, grate it first so it dissolves quickly into the tamarind and fish sauce.
  • Food safety: make sure the prawns are cooked until fully pink and opaque, and the eggs are set before serving.

Substitutions

  • Replace Palm sugar with Light brown sugar for a similar caramel sweetness.
  • Replace Chili flakes with Sriracha for heat, stirred into the sauce to taste.
  • Replace Roasted peanuts with Cashew nuts for a milder, creamier crunch.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, cover and refrigerate. Reheat gently in a frying pan over medium heat for 2 to 3 minutes, tossing just until piping hot; the courgette will soften as it sits.
