Taco Salad with Spiced Minced Beef and Lime Yoghurt
Why this recipe works
- Strong texture contrast: Warm beef, crisp lettuce, creamy avocado and crunchy tostada shells keep each bite varied.
- Bright, cooling dressing: Lime yoghurt cuts through the richness of the beef and adds a clean tangy finish.
- Fast weeknight method: The beef cooks quickly in one pan while the salad ingredients are prepared fresh.

Texture tips
- Keep the lettuce crisp: Let the beef cool briefly before spooning it over the romaine so the leaves stay fresh rather than wilting.
- Add crunch at the last moment: Crush and scatter the tostada shells just before serving so they stay crisp against the dressing.
Make-ahead tips
- Store in separate containers: Keep the beef, dressing, lettuce and toppings apart in the fridge to preserve the salad’s texture.
- Assemble fresh: Build the bowls just before eating, adding avocado and tostada shells last for the best result.
- Reheat the beef gently: Warm the beef in a frying pan over medium heat until piping hot, then let it stand briefly before adding it to the salad.
Ingredient notes
- Choose firm-ripe avocado: The avocado should be ripe enough to taste creamy but firm enough to hold its shape when diced.
- Drain the beans well: Rinsing and draining the black beans keeps the salad cleaner-tasting and prevents excess liquid from pooling in the bowl.

Instructions
- Finely chop the onion and crush the garlic. Shred the romaine lettuce, halve the cherry tomatoes, and dice the avocado. Drain and rinse the black beans, then set everything aside.
- Set a large frying pan over medium-high heat and cook the onion for 3 to 4 minutes until softened. Add the garlic and cook for 30 seconds until fragrant. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated.
- Stir in the ground cumin and smoked paprika and cook for 1 minute. Squeeze in a little lime juice to lift the spices, then take the pan off the heat. Taste and adjust with more lime juice if you like it brighter.
- In a bowl, whisk the greek yogurt with the remaining lime juice until smooth and pourable. If it feels too thick, whisk in a splash of water from the tap. Set aside as your dressing.
- Divide the romaine lettuce between two bowls and top with the black beans, cherry tomatoes and avocado. Spoon the warm spiced beef over the top. Crush the tostada shells and scatter over just before serving, then drizzle with the lime yoghurt dressing.
Recipe notes
Tips
- For the best texture, let the beef cool for 2 minutes before spooning over the lettuce so it stays crisp rather than wilting.
- If serving to young children, keep the smoked paprika to 0.5 tsp and add extra lime yoghurt at the table to mellow the spices.
Substitutions
- Replace Greek yogurt with whole-milk yogurt for a looser, milder dressing.
- Replace tostada shells with corn tortillas, toasted in a dry pan until crisp, then broken into shards.
Storage
- Refrigerate up to 2 days
- Store the cooked beef separately from the lettuce and toppings for the best texture. Chill the beef and dressing in airtight containers, then reheat the beef in a frying pan over medium heat for 3 to 5 minutes until piping hot; assemble the salad fresh and add the tostada shells at the last moment.
