Latin-Style Chicken Rice Bowl with Black Beans and Avocado
Why this recipe works
- Bright, balanced flavour: Lime seasons the chicken, lifts the beans and finishes the bowl, keeping the rice and avocado from tasting heavy.
- Contrasting textures: Juicy browned chicken, fluffy rice, creamy avocado, warm beans and fresh tomatoes give the bowl a satisfying mix of soft, fresh and savoury elements.
- Good for lunch prep: The rice, chicken and beans reheat well, while the avocado and tomatoes can be kept separate and added fresh when serving.

Common mistakes
- Avoid crowding the chicken: Give the thighs enough space in the frying pan so they brown properly rather than steaming.
- Do not skip the rest: Resting the chicken briefly before slicing helps keep the meat juicy and prevents the juices from running straight into the bowl.
- Store fresh toppings separately: Keep avocado and tomatoes apart from the hot components so they stay fresh in texture and colour.
Ingredient swaps
- Use chicken breast instead: Chicken breast cutlets work well, but cook them for a shorter time so they stay tender.
- Swap the herbs: Use fresh parsley instead of coriander if you prefer a milder, less citrusy finish.
- Change the tomatoes: Diced Roma tomato can replace cherry tomatoes for a less sweet, more savoury topping.
Make-ahead tips
- Prepare the cooked base ahead: Cook the rice, chicken and beans in advance and refrigerate them together for easy lunches.
- Add fresh ingredients last: Slice the avocado and add the tomatoes, coriander and lime just before serving for the best texture.
- Reheat gently: Warm the rice, chicken and beans with a splash of water until piping hot, then add the fresh toppings.
Serving ideas
- Finish with extra lime: Serve with lime wedges so each bowl can be sharpened to taste at the table.
- Add crunch if you like: A few sliced radishes or finely shredded lettuce add freshness and contrast without changing the character of the bowl.
- Serve with a simple sauce: A spoonful of salsa, hot sauce or yoghurt-based lime sauce works well if you want a saucier bowl.

Ingredients
Instructions
- Rinse the rice until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes to steam.
- Meanwhile, pat the chicken thighs dry. In a bowl, mix the ground cumin, black pepper, the remaining fine sea salt, the garlic (finely grated or crushed), the juice of 1 lime, and 1 tbsp of the extra virgin olive oil. Add the chicken and turn to coat well.
- Heat the remaining 1 tbsp olive oil in a large frying pan over a medium-high heat. Add the chicken and cook for 5 to 6 minutes per side, until deeply browned and cooked through. Transfer to a board and rest for 5 minutes.
- While the chicken rests, drain and rinse the canned black beans, then add them to the same pan with a squeeze of lime and a splash of water. Warm for 2 to 3 minutes, scraping up any browned bits, until hot. Taste and season with a little more black pepper if you like.
- Halve the cherry tomatoes. Halve, stone and slice the avocado, then cut the rested chicken into strips. Cut the remaining lime into wedges.
- Fluff the rice and divide between two bowls. Top with the chicken, black beans, cherry tomatoes and avocado, then finish with fresh coriander and a final squeeze of lime. Serve straight away with extra lime wedges on the side.
Recipe notes
Tips
- For the juiciest chicken, let the pan get properly hot before adding it, then avoid moving it for the first few minutes so it browns well.
- If you are cooking for anyone vulnerable, make sure the chicken is piping hot all the way through with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets; reduce the cooking time to 3 to 4 minutes per side so they stay tender.
- Replace Fresh coriander with Fresh parsley for a milder, less citrusy finish.
- Replace Cherry tomatoes with Roma tomato, diced, for a less sweet topping.
Storage
- Refrigerate up to 3 days
- Store rice, chicken and beans together in an airtight container; keep the avocado and tomatoes separate and add fresh when serving. Reheat the rice, chicken and beans in a saucepan with a splash of water over a low heat, or in the microwave, until piping hot.
