Chicken Tinga Rice Bowl with Chipotle Tomato Sauce
Why this recipe works
- Smoky, savoury depth: Onion, garlic, cumin, oregano, tomato and chipotle build a rounded sauce that clings well to shredded chicken.
- Built for bowls: Rice makes the tinga filling and practical, while avocado, coriander and lime add freshness and contrast.
- Good for planning ahead: The chicken tinga can be cooked in advance, chilled or frozen, then reheated and served with fresh toppings.

Adjust the heat
- Make it milder: Use less chipotle sauce and add extra lime at the end to keep the sauce bright without increasing the heat.
- Add more heat: Increase the chipotle sauce gradually once the tomatoes are simmering, tasting before adding more.
- Balance the spice: Ripe avocado and a final squeeze of lime soften the smoky chilli heat and make the bowl feel fresher.
Authenticity notes
- Tinga-style sauce: Tinga is typically based on shredded meat cooked with onions in a tomato and chipotle sauce.
- Smoother sauce option: Blending the tomato mixture before adding the chicken gives a smoother, more classic tinga-style finish.
- Rice bowl format: Serving the tinga over rice is a practical adaptation that keeps the core smoky tomato-chipotle flavour.
Make-ahead tips
- Keep toppings separate: Store the chicken tinga apart from the rice, avocado, lime and coriander for the best texture.
- Freeze the tinga only: The sauced shredded chicken freezes well; add fresh avocado, herbs and lime after reheating.
- Reheat gently: Warm the tinga with a splash of water until piping hot, keeping the heat moderate so the chicken stays juicy.
Common mistakes
- Avoid dry chicken: Once the chicken is cooked through and tender, shred it and return it briefly to the sauce rather than simmering it hard.
- Don’t leave the sauce too loose: Let the tomato-chipotle sauce reduce slightly before returning the shredded chicken so it coats rather than floods the rice.
- Rest the rice: Leaving the covered rice off the heat helps the grains finish steaming and makes the bowl fluffier.

Instructions
- Rinse the rice until the water runs mostly clear. Tip into a saucepan with the water and half the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, peel and thinly slice the yellow onion, then peel and finely grate the garlic. Warm the extra virgin olive oil in a large frying pan over a medium heat and cook the onion with a pinch of the remaining salt for 8 to 10 minutes, stirring, until soft and lightly golden. Stir in the garlic, ground cumin and dried oregano for 30 seconds until fragrant.
- Add the canned chopped tomatoes and chipotle sauce, then bring to a gentle simmer. Nestle in the chicken thighs and simmer, partially covered, for 18 to 22 minutes, turning once, until the chicken is cooked through and tender. Lift the chicken onto a board and simmer the sauce for 2 to 3 minutes to thicken slightly.
- Shred the chicken with two forks, then return it to the pan and stir to coat in the sauce. Squeeze in half the lime and taste, adding more lime and the remaining fine sea salt as needed. Keep the heat low so the tinga stays juicy.
- Halve, stone and slice the avocado, then roughly chop the fresh coriander. Fluff the rice and divide between two bowls, spoon over the chicken tinga, and top with avocado and coriander. Serve with the remaining lime cut into wedges for squeezing over at the table.
Recipe notes
Tips
- For a smoother, more traditional tinga-style sauce, blend the tomato mixture (without the chicken) until smooth, then return it to the pan and continue with the recipe.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast boneless skinless for a leaner bowl; reduce the simmering time slightly so it stays tender.
- Replace Long-grain white rice with Brown rice, but allow a longer cooking time and add extra water as needed.
Storage
- Refrigerate up to 3 days
- Cool the chicken tinga quickly and refrigerate in a sealed container for up to 3 days. Reheat in a saucepan with a splash of water until piping hot; store rice separately if possible. Freeze the chicken tinga (without avocado, lime, or fresh coriander) for up to 2 months and defrost overnight in the fridge before reheating.
