Vegetarian Shepherd’s Pie with Lentils
Why this recipe works
- Deep savoury base: Tomato purée, thyme and Worcestershire sauce give the lentils a rounded, gravy-like flavour rather than a flat vegetable filling.
- Fluffy potato topping: Steam-drying the potatoes and adding warm milk helps the mash stay light, smooth and able to brown in the oven.
- Good for planning ahead: The pie reheats well and can be portioned for the fridge or freezer, making it useful for batch cooking.

Ingredient notes
- Use green lentils: Green lentils hold their shape better than red lentils, giving the filling body while still thickening the gravy.
- Check the Worcestershire sauce: Traditional Worcestershire sauce often contains anchovies, so choose a vegetarian version if you want the dish to remain fully vegetarian.
- Cut the vegetables small: Small, even pieces of carrot and onion soften into the lentil mixture and help the filling feel cohesive.
Texture tips
- Thicken before topping: The lentil filling should coat a spoon before it goes into the baking dish; if it looks loose, simmer it a little longer.
- Keep the mash light: Drain the potatoes well and let excess steam escape before mashing so the topping does not turn watery.
- Encourage browning: Roughing up the mash with a fork creates ridges that brown more readily in the oven.
Make-ahead tips
- Make the components ahead: The lentil filling and mash can be prepared in advance, then assembled before baking.
- Freeze in portions: Cool the baked pie completely before freezing; thaw overnight in the fridge for the most even reheating.
- Reheat gently: Warm in a 180°C (355°F) oven until piping hot throughout, covering loosely if the potato topping browns too quickly.
Timing notes
- Use the simmering time well: Boil and mash the potatoes while the lentils cook to keep the workflow efficient.
- Let it stand before serving: A short rest after baking helps the gravy settle and makes the pie easier to spoon into clean portions.

Instructions
- Heat the oven to 200°C (390°F). Peel and dice the onion, then peel and dice the carrots into small pieces so they cook evenly.
- Melt 30 g of the butter in a large pot over medium heat. Add the onion and carrots with a pinch of the salt and cook for 8 to 10 minutes, stirring, until softened and lightly golden.
- Stir in the thyme sprigs and tomato purée and cook for 1 minute until fragrant. Add the lentils, vegetable stock, Worcestershire sauce, remaining salt and the pepper, then bring to a gentle simmer.
- Simmer for 25 to 30 minutes, stirring occasionally, until the lentils are tender and the gravy is thick enough to coat a spoon. Remove and discard the thyme sprigs, then scrape the filling into a baking dish.
- While the lentils simmer, peel the potatoes and cut into even chunks. Boil in a large pot of salted water for 15 to 18 minutes until very tender, then drain well and let them steam-dry for 2 minutes.
- Warm the milk in a saucepan until steaming but not boiling. Mash the potatoes with the remaining 40 g butter, then gradually mash in the warm milk until smooth and fluffy.
- Spoon the mash over the lentil filling and spread to the edges to seal, then rough up the top with a fork for extra browning. Bake for 20 to 25 minutes until lightly browned and bubbling at the edges.
- Let the pie stand for 10 minutes so the layers set. Serve hot.
Recipe notes
Tips
- Dice the carrots small so they soften in the same time as the lentils and give the filling a cohesive texture.
- If the filling looks a little loose at the end of simmering, keep it on the hob for a few extra minutes, stirring, until it thickens before topping with mash.
- For the best mash, drain the potatoes thoroughly and let them steam-dry briefly before mashing so the topping stays fluffy rather than watery.
Substitutions
- Replace Yukon Gold potato with red potato for a slightly firmer, more rustic mash.
- Replace whole milk with lactose-free milk for a similar richness.
- Replace fresh thyme with dried thyme, using a smaller amount and removing it from the heat once the filling tastes fragrant.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven until piping hot throughout; if the top browns too quickly, cover loosely while it heats. Freeze in portions, thaw overnight in the fridge, then reheat as above.
