Chicken Tikka Masala with Basmati Rice
Why this recipe works
- Layered curry base: Softened onion, garlic, ginger, toasted spices and tomato purée build depth before the chicken returns to the sauce.
- Creamy, balanced sauce: Double cream gives the sauce body while yoghurt adds a gentle tang that keeps the richness in check.
- Built for rice: The tomato-rich sauce thickens enough to coat the chicken and spoon neatly over fluffy basmati rice.

Texture tips
- Keep the chicken tender: Once the chicken goes back into the pot, keep the sauce at a gentle simmer rather than a hard boil.
- Protect the dairy: Warm the cream gently and stir the yoghurt in off the heat for a smoother, more stable finish.
Ingredient notes
- Use a good garam masala: Garam masala is the main spice blend here, so a fresh, fragrant mix makes a noticeable difference.
- Ghee adds depth: Ghee gives the sauce a rounded, nutty richness; butter is a practical substitute if needed.
- Balance the tang: Add the yoghurt gradually and taste before adjusting the final seasoning, as different yoghurts vary in sharpness.
Make-ahead tips
- Store curry and rice separately: Keeping the rice separate helps it stay fluffy and makes reheating easier.
- Reheat gently: Warm the curry over low heat, stirring often and loosening with a splash of water if the sauce has thickened.
- Freeze the curry: The curry can be frozen after cooking; cool it quickly first and reheat until piping hot before serving.
Authenticity notes
- Curry-house style: Chicken tikka masala is closely associated with British-Indian restaurants, known for its creamy tomato sauce and mellow spicing.
- Classic pairing: Basmati rice is a natural match, giving the rich sauce something light and fragrant to absorb.

Ingredients
Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear. Tip into a saucepan, add plenty of water and 1 tsp of the fine sea salt, then bring to the boil. Simmer for 10 to 12 minutes until tender, then drain and cover to steam-dry.
- Meanwhile, cut the chicken thighs into bite-sized pieces and season with the black pepper and a pinch of the remaining salt. Finely chop the yellow onion, then crush the garlic and finely grate the ginger root. Keep everything close to the hob so the spices do not catch.
- Heat the ghee in a large pot over medium-high heat. Add the chicken and cook for 4 to 5 minutes, turning, until lightly browned (it will not be cooked through yet). Transfer the chicken to a plate.
- Lower the heat to medium and add the onion to the same pot with a pinch of salt. Cook for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the garlic and ginger and cook for 1 minute until fragrant.
- Stir in the garam masala and ground cumin for 30 seconds, then add the tomato purée and cook for 1 minute to deepen the flavour. Tip in the canned tomatoes and bring to a gentle simmer, scraping up any browned bits from the base. Simmer for 5 minutes to thicken slightly.
- Return the chicken (and any juices) to the pot and simmer gently for 10 to 12 minutes, stirring occasionally, until the chicken is cooked through and the sauce coats the back of a spoon. Stir in the double cream and warm for 2 minutes without boiling. Take off the heat and stir in the yogurt until smooth and gently tangy, then taste and season with the remaining salt if needed.
- Fluff the rice with a fork and divide between bowls or plates. Spoon over the chicken tikka masala and serve straight away. If the sauce thickens as it stands, loosen it with a splash of water from the kettle and warm gently.
Recipe notes
Tips
- Keep the sauce at a gentle simmer once the chicken goes back in; a hard boil can make the meat tough and can split the dairy later.
- For the smoothest finish, take the pot off the heat before stirring in the yogurt, then return to a very low heat only if it needs warming.
Substitutions
- Replace ghee with butter for a similar richness.
- Replace double cream with cream for a slightly lighter sauce.
Storage
- Refrigerate up to 3 days
- Cool the curry and rice quickly, then refrigerate in separate containers. Reheat the curry in a saucepan over low heat until piping hot, stirring often; add a splash of water if needed. Reheat the rice in the microwave with a tablespoon of water, covered, until piping hot.
