Zwiebelkuchen (German Onion Tart with Bacon)
Why this recipe works
- Yeasted base: The soft dough gives the tart enough structure to hold the rich onion topping while keeping a light, bread-like bite.
- Built-in savouriness: Rendering the smoked pork belly first leaves flavourful fat in the pan, which helps season the onions as they soften.
- Set, creamy filling: Eggs and crème fraîche bind the onions into a savoury custard that slices neatly after a short rest.

Timing notes
- Let the dough rise fully: The dough should look noticeably doubled before rolling; a cooler kitchen may make this take longer than the estimated rise time.
- Cool the onions before mixing: Let the cooked onions lose their heat before adding the eggs and crème fraîche so the filling stays smooth rather than scrambling.
- Rest before slicing: Leaving the baked tart to stand briefly helps the custard settle, so the wedges hold together cleanly.
Ingredient notes
- Use yellow onions: Yellow onions soften well and turn naturally sweet without becoming overly sharp, which suits the rich dairy and bacon topping.
- Choose smoky pork belly or bacon: Smoked pork belly gives the tart its savoury depth; bacon works well too, especially if it has enough fat to render into the pan.
- Caraway is the signature spice: Caraway adds an earthy, lightly aniseed note that cuts through the richness and makes the tart recognisably German in style.
Authenticity notes
- Home-style German baking: This version follows the familiar pattern of a yeasted dough base with an onion, egg and dairy topping rather than a pastry shell.
- Traditional serving: Zwiebelkuchen is commonly served warm in wedges and pairs especially well with crisp salads or simple pickled vegetables.
Make-ahead tips
- Cook the topping components ahead: The pork belly and softened onions can be cooked in advance, cooled, and refrigerated before mixing with the eggs and crème fraîche.
- Reheat on a tray: Reheat chilled slices on a baking tray at 180°C (355°F) until piping hot, which helps revive the edges without making the base soggy.
- Best served warm: The tart is at its best warm after baking, when the base is tender and the filling is freshly set, though leftovers keep well in the fridge.

Instructions
- Warm the milk until just lukewarm. Stir in the yeast and leave for 5 minutes until lightly foamy.
- Put the flour and salt in a mixing bowl, then add the yeasted milk and softened butter. Mix, then knead for 8 to 10 minutes until smooth and elastic.
- Cover the bowl and leave the dough to rise in a warm place until doubled in size. This usually takes about 45 minutes.
- Meanwhile, cut the smoked pork belly into small pieces and fry in a large frying pan over medium heat until the fat renders and the pieces are lightly golden. Lift out to a plate, leaving the fat in the pan.
- Peel and thinly slice the onions. Add the butter to the pan, then cook the onions with a pinch of the salt over medium-low heat for 15 to 20 minutes until very soft and sweet, but not browned.
- Tip the onions into a bowl and leave to cool for 10 minutes so they do not scramble the eggs. Stir in the caraway seeds, black pepper, remaining salt, eggs and crème fraiche, then fold in the fried pork belly.
- Heat the oven to 200°C (390°F). Roll out the dough and press it into a cake pan, bringing it slightly up the sides to form a rim.
- Spread the onion mixture evenly over the dough. Bake for 30 to 35 minutes until the topping is set and the edges are deep golden.
- Leave the tart to stand for 10 minutes before slicing so it holds together neatly. Serve warm, cut into wedges.
Recipe notes
Tips
- Keep the onions on a gentle heat and stir often; you want them soft and sweet without browning, which can make the topping taste bitter.
- If the tart is browning too quickly at the edges, move it to a lower shelf for the last 10 minutes of baking.
- Eggs should be cooked until the filling is fully set; this is especially important for young children, pregnant people, and anyone with a weakened immune system.
Substitutions
- Replace Crème fraiche with Greek yogurt for a slightly tangier topping.
- Replace Smoked pork belly with bacon for a similar smoky, savoury flavour.
- Replace Caraway seeds with cumin seeds for a warmer, earthier spice note.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat slices on a baking tray at 180°C (355°F) for 10 to 12 minutes until piping hot.
