Flammkuchen (German-Style Flatbread)

Flammkuchen, closely associated with south-west German and Alsatian cooking, is a paper-thin flatbread prized for its crisp base and simple savoury topping. A lightly yeasted dough is rolled very thin, then finished with crème fraîche, raw sliced onion and smoky pork belly, which bakes into salty, creamy and lightly sweet layers. Served hot and cut into pieces, it works well as a casual dinner, a sharing plate or an alternative to pizza when you want something lighter, sharper and more delicate.

Why this recipe works

  • Thin, crisp base: Rolling the dough very thinly and baking it on a fully heated tray gives the flatbread its characteristic blistered edges.
  • Balanced topping: Crème fraîche adds gentle tang and richness, while onion and smoked pork belly bring sweetness, salt and savoury depth.
  • Short resting time: The dough needs only a brief rest, making this quicker than many yeast-based flatbreads.

Timing notes

  • Serve immediately: Flammkuchen has the best texture straight from the oven, while the base is crisp and the edges are still blistered.
  • Let the dough relax if needed: If the dough springs back while rolling, pause for 5 minutes before continuing; relaxed dough rolls thinner and more evenly.

Texture tips

  • Use strong bottom heat: Preheating the baking tray helps set the underside quickly, giving a crisper base without overcooking the topping.
  • Keep the topping light: Spread the crème fraîche thinly and avoid piling on too much onion, which can release moisture as it bakes.

Ingredient notes

  • Choose smoky pork: Smoked pork belly gives the most traditional salty, savoury finish, but streaky bacon works well as an accessible substitute.
  • Use crème fraîche with enough body: A thicker crème fraîche spreads neatly and holds up better in the oven than a very loose dairy topping.

Serving ideas

  • Add a crisp salad: A simple green salad with a sharp vinaigrette balances the rich crème fraîche and pork topping.
  • Pair with dry white wine: A dry Riesling or Pinot Blanc works well with the creamy, smoky and onion-sweet flavours.

  1. Heat the oven to 250°C (480°F) and put a baking tray inside to get very hot. In a mixing bowl, stir together the plain flour, fine sea salt and active dry yeast. Add the olive oil and lukewarm water, then mix and knead for 3 to 4 minutes until smooth.
  2. Cover the dough and leave it to rest at room temperature for 20 minutes. Meanwhile, halve and thinly slice the yellow onion. Cut the smoked pork belly into small lardons.
  3. Warm a saucepan over medium heat and cook the smoked pork belly for 4 to 6 minutes until it renders some fat and starts to colour. Tip it onto a plate, leaving any excess fat behind. Keep the onions raw for topping.
  4. Divide the dough into 2 pieces and roll each one very thinly into an oval or rectangle. Spread the crème fraiche over the dough, leaving a small border. Season evenly with black pepper and a small pinch of fine sea salt.
  5. Scatter the sliced yellow onion over the top, then add the smoked pork belly. Carefully slide one flatbread onto the hot baking tray and bake for 7 to 9 minutes until blistered and crisp at the edges. Repeat with the second flatbread, then slice and serve straight away.

Recipe notes

Tips

  • Roll the dough as thin as you can; if it springs back, leave it for 5 minutes, then roll again.
  • For the best blistered base, make sure the baking tray is fully preheated before baking.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised crème fraiche.

Substitutions

  • Replace Crème fraiche with Greek yogurt for a lighter, tangier topping.
  • Replace Smoked pork belly with Bacon for a similar smoky-salty finish.
  • Replace Olive oil with Vegetable oil in the dough if needed.

Storage

  • Refrigerate up to 2 days
  • Flammkuchen is best eaten straight away. Refrigerate leftovers in a sealed container and reheat on a hot baking tray in a 220°C (430°F) oven for 5 to 7 minutes until crisp and piping hot.
