Tarte Flambée (French Flatbread with Onion and Lardons)

Tarte flambée, or flammekueche, is the crisp, ultra-thin flatbread associated with Alsace, usually served hot and cut into generous slices for sharing. Its character comes from a lean, thinly rolled base spread with seasoned crème fraîche, then topped with sweet softened onion and smoky lardons. Baked in a very hot oven, the edges blister while the topping turns lightly golden, giving a mix of crackly crust, creamy richness and savoury bacon. It works well as a casual dinner, starter or drinks-table dish, and is best eaten straight from the oven while the base is still crisp.

Why this recipe works

  • Crisp, blistered base: Rolling the dough very thinly and baking it on a fully heated tray helps the flatbread cook quickly and turn crackly at the edges.
  • Savoury depth: Smoked bacon renders before baking, giving the onions extra richness and adding a savoury backbone to the creamy topping.
  • Rich but balanced: Crème fraîche brings gentle tanginess, which keeps the lardons and onions from feeling too heavy.

Authenticity notes

  • Alsatian roots: Tarte flambée, also known as flammekueche, is closely associated with Alsace and is known for its thin base, creamy topping, onions, and lardons.
  • Topping variations: Some versions use fromage blanc with or instead of crème fraîche, giving the topping a lighter, slightly sharper finish.

Timing notes

  • Let the dough relax: The short rise gives the dough enough elasticity to roll out thinly without making the base bready.
  • Serve immediately: Tarte flambée is at its best hot from the oven, while the edges are still crisp and the topping is lightly browned.

Texture tips

  • Roll it very thin: A thin base is essential for the classic crackly texture; a thicker dough will bake more like pizza.
  • Keep the topping controlled: Spread the crème fraîche evenly and avoid piling the onions and bacon too heavily in the centre.

Make-ahead tips

  • Prepare components ahead: The onion and bacon mixture can be cooked in advance and kept chilled, then used when you are ready to assemble.
  • Assemble just before baking: For the crispest result, roll, top, and bake the flatbread shortly before serving rather than leaving it assembled.
  • Reheat on a tray: Leftovers reheat best on a baking tray in a 220°C (430°F) oven until hot and crisp again.

  1. Put the flour, instant yeast and fine sea salt in a mixing bowl and stir to combine. Add the olive oil and lukewarm water, then mix to a shaggy dough. Knead for 6 to 8 minutes until smooth and elastic.
  2. Cover the bowl and leave the dough to rise at room temperature until slightly puffy, about 45 minutes. Meanwhile, set the oven to 250°C (480°F) and put a baking tray inside to heat up.
  3. Halve and thinly slice the onions. Cut the bacon into small lardons. Warm a frying pan over medium heat and cook the bacon for 4 to 5 minutes until it renders some fat, then add the onions and cook for 8 to 10 minutes until softened and lightly golden.
  4. Stir the crème fraiche with the black pepper and ground nutmeg. Taste and add a small pinch of fine sea salt if needed, bearing in mind the bacon is salty. Keep the mixture cool while you shape the base.
  5. Tip the dough onto a lightly floured surface and roll it out very thinly into a rough rectangle. Carefully slide it onto the hot baking tray. Spread the crème fraiche mixture over the dough, leaving a small border.
  6. Scatter over the onion and bacon mixture. Bake for 10 to 12 minutes until the edges are blistered and deeply golden, and the topping is lightly browned. Slice and serve straight away.

Recipe notes

Tips

  • For the crispest base, roll the dough as thinly as you can and make sure the baking tray is fully preheated before topping.
  • If the onions start to colour too quickly in the pan, lower the heat and add a splash of water to help them soften without burning.
  • If serving anyone who is pregnant, elderly, or immunocompromised, ensure the tarte flambée is baked until piping hot throughout.

Substitutions

  • Replace Crème fraiche with Greek yogurt for a lighter, tangier topping.
  • Replace Bacon with Pancetta for a slightly sweeter, less smoky flavour.
  • Replace Olive oil with Rapeseed oil for a more neutral flavour in the dough.

Storage

  • Refrigerate up to 2 days
  • Cool completely, then refrigerate in an airtight container for up to 2 days. Reheat on a baking tray in a 220°C (430°F) oven for 6 to 8 minutes until hot and crisp again.
