Kimchi Jjigae (Korean Kimchi and Pork Belly Stew with Tofu)
Why this recipe works
- Layered savoury depth: Browning the pork belly first renders fat into the pan, giving the kimchi, garlic, gochugaru and gochujang a richer base.
- Tangy balance: Well-fermented kimchi brings acidity that cuts through the pork and keeps the broth bright rather than heavy.
- Simple one-pan method: The stew builds flavour in stages in a single saucepan, then finishes gently with tofu so the pieces stay soft.

Ingredient notes
- Choose mature kimchi: Well-fermented kimchi gives the stew its characteristic tang and depth. Fresher kimchi will taste milder and less rounded.
- Use Korean chilli flakes: Gochugaru has a distinctive fruity heat and coarse texture, which helps create the recognisable colour and flavour of the broth.
Adjust the heat
- For less heat: Reduce the gochugaru and keep the simmer gentle so the kimchi flavour remains clear without the stew becoming too fiery.
- For deeper heat: Add a little more gochujang towards the end of simmering, tasting as you go so the broth stays balanced.
Texture tips
- Keep the tofu delicate: Add the soft tofu near the end and simmer very gently. Shaking the pan instead of stirring helps keep the pieces intact.
- Tender pork: Let the pork belly simmer until the broth tastes rounded and the meat softens; if the liquid reduces too quickly, add a small splash of water.
Make-ahead tips
- Good for leftovers: The broth often tastes fuller after a night in the fridge as the kimchi, pork and chilli flavours settle together.
- Reheat gently: Warm in a saucepan over low heat until piping hot, stirring carefully so the soft tofu does not break apart.

Ingredients
Instructions
- Slice the pork belly into bite-sized pieces. Thinly slice the onion, and finely chop the garlic. Roughly chop the kimchi if it is in long strands.
- Heat the toasted sesame oil in a saucepan over medium heat. Add the pork belly and cook for 5 to 7 minutes, stirring, until it has rendered some fat and is lightly browned. Add the onion and cook for 3 minutes until starting to soften.
- Stir in the garlic, Korean chili flakes gochugaru and gochujang, and cook for 30 seconds until fragrant. Add the kimchi and cook for 3 to 4 minutes, stirring, until it smells rich and tangy. Pour in the water and bring to a gentle simmer.
- Simmer gently for 15 to 18 minutes, stirring occasionally, until the pork is tender and the broth tastes rounded and spicy. If it reduces too quickly, add a splash more water. Taste and adjust with a little more gochujang if you want it deeper and hotter.
- Cut the soft tofu into large chunks and slide them into the stew. Simmer very gently for 3 to 4 minutes until warmed through, shaking the pan rather than stirring to avoid breaking the tofu. Slice the spring onion and scatter over the top to serve.

Serving suggestions
This recipe pairs well with:
Tips
- Use well-fermented kimchi for the best tang and depth; fresher kimchi will taste flatter and may need a longer simmer.
- Keep the stew at a gentle simmer once the tofu goes in, and move the pan rather than stirring so the tofu stays in soft pieces.
Substitutions
- Replace pork belly with pork shoulder for a leaner stew; simmer 5 to 10 minutes longer until tender.
- Replace toasted sesame oil with olive oil if needed; finish with a small drizzle of toasted sesame oil only if you have it for aroma.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the soft tofu does not break up.
