Albóndigas en Salsa de Chipotle (Beef Meatballs in Chipotle Sauce)
Why this recipe works
- Layered savoury depth: Browning the meatballs first creates flavour in the pan, which is carried into the onion, garlic, tomato and chipotle sauce.
- Smoky chipotle heat: Toasting the dried chipotle before blending brings out its smoky, fruity character and gives the sauce a clear Mexican flavour profile.
- Good for planning ahead: The meatballs hold well in the sauce, making the dish suitable for reheating, freezing and serving with freshly cooked rice.

Adjust the heat
- For less heat: Use less of the toasted chipotle in the blended sauce, tasting and adjusting before the meatballs go back into the pan.
- For a hotter sauce: Add extra chipotle if you want a stronger smoky chilli flavour, then balance the final sauce with seasoning to taste.
- Keep it rounded: Serve generously with rice and coriander, which soften the chilli warmth without muting the sauce.
Ingredient notes
- Choose aromatic chipotle: A good dried chipotle should smell smoky and slightly fruity rather than flat or dusty.
- Toast briefly: Toast the chipotle just until fragrant; letting it darken too much can make the sauce taste bitter.
- Blend until smooth: A fully blended sauce coats the meatballs more evenly and gives the finished dish a richer consistency.
Make-ahead tips
- Prep components ahead: The meatballs can be rolled and the sauce blended in advance, then kept chilled separately until cooking.
- Freeze in the sauce: Freeze the cooked meatballs together with the sauce rather than the rice; cook fresh rice when serving.
- Reheat gently: Warm in a saucepan with a splash of water until piping hot, keeping the heat moderate so the sauce does not catch.
Common mistakes
- Mix lightly: Work the beef mixture only until combined; too much mixing can make the meatballs firm and dense.
- Brown in batches: Give the meatballs space in the pan so they brown properly rather than steaming.
- Simmer, don’t boil: Once the meatballs are in the sauce, keep it at a gentle simmer to finish them evenly and preserve a tender texture.

Instructions
- Put the rice in a saucepan with a pinch of fine sea salt and enough water to cover by about 2 cm. Bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, roughly chop the onion and peel the garlic. Toast the chipotle pepper in a dry frying pan over medium heat for 30 to 60 seconds until fragrant, then tip into a blender. Add the canned tomatoes and chicken stock, then blend until smooth.
- Finely chop a small handful of the onion and set it aside for the meatballs; keep the rest for the sauce. In a mixing bowl, combine the minced beef, egg, breadcrumbs, the reserved onion, 1 tsp fine sea salt and 1/2 tsp black pepper. Mix just until combined, then roll into 16 meatballs.
- Heat the vegetable oil in a large frying pan over medium-high heat. Brown the meatballs in batches for 5 to 7 minutes total, turning to colour all over; they do not need to be cooked through yet. Transfer to a plate.
- Lower the heat to medium and add the remaining onion to the pan, scraping up any browned bits. Cook for 4 to 5 minutes until softened, then add the garlic and cook for 30 seconds. Pour in the blended tomato and chipotle sauce and bring to a gentle simmer.
- Return the meatballs to the pan and simmer gently for 12 to 15 minutes, turning once, until the sauce thickens slightly and the meatballs are cooked through. Season with the remaining fine sea salt and black pepper to taste. Roughly chop the fresh coriander.
- Fluff the rice with a fork and divide between plates. Spoon over the meatballs and plenty of sauce, then finish with fresh coriander. Serve straight away.

Serving suggestions
This recipe pairs well with:
Tips
- For the juiciest meatballs, mix the minced beef only until the egg and breadcrumbs are evenly distributed; overmixing makes them dense.
- Keep the sauce at a gentle simmer once the meatballs go in, so it thickens without catching on the bottom of the pan.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the meatballs are cooked until piping hot all the way through.
Substitutions
- Replace the minced beef with minced turkey for a lighter meatball.
- Replace the chicken stock with vegetable broth for a slightly lighter, less meaty sauce.
- Replace the breadcrumbs with gluten-free bread crumbs to make the meatballs gluten-free.
Storage
- Refrigerate up to 3 days
- Cool the meatballs and sauce completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of water until piping hot. Freeze the meatballs in sauce for up to 2 months; defrost overnight in the fridge before reheating.
