Samboosa (Spiced Lamb and Vegetable Pastry Parcels)

Samboosa are crisp, triangular pastry parcels enjoyed across Middle Eastern and neighbouring cuisines, usually filled with spiced meat, vegetables or pulses and served hot as a snack, starter or part of a larger meal. This baked version uses delicate phyllo for a lighter, flaky shell around minced lamb cooked with onion, garlic, peas, cumin, coriander, turmeric and a little chilli. The filling is savoury and gently warming rather than fiery, while the yoghurt dip adds coolness and tang. They work well for sharing, and the baked method keeps the parcels golden and crisp without deep-frying.

Why this recipe works

  • Crisp baked pastry: Layered phyllo bakes into a light, golden shell while keeping the parcels less heavy than deep-fried versions.
  • Warm spiced filling: Cumin, coriander, turmeric and chilli season the lamb without overpowering the sweetness of the onion and peas.
  • Cooling dip: Yoghurt adds a fresh, tangy contrast to the rich lamb and crisp pastry.

Texture tips

  • Cool the filling before folding: Let the lamb mixture cool until just warm before adding it to the phyllo; hot filling can steam and soften the pastry.
  • Bake on a hot tray: Preheating the baking tray helps the bases crisp quickly and gives the parcels a better all-round texture.
  • Keep the phyllo covered: Work with a few strips at a time and keep the rest under a slightly damp tea towel so it stays flexible rather than cracking.

Adjust the heat

  • For less heat: Reduce or omit the chilli flakes in the filling and serve the yoghurt plain.
  • For more heat: Add extra chilli flakes to the lamb mixture or sprinkle a little over the yoghurt dip before serving.
  • Keep the balance: If increasing the chilli, keep the yoghurt dip on the side to soften the heat and refresh the palate.

Make-ahead tips

  • Cook the filling ahead: The lamb and pea filling can be cooked in advance, cooled, and refrigerated before assembling the parcels.
  • Freeze baked parcels: Cool the baked samboosa completely, then freeze in a sealed container for reheating later.
  • Reheat for crispness: Reheat on a baking tray at 180°C (355°F) until piping hot and crisp rather than microwaving, which can soften the pastry.

Serving ideas

  • Serve with yoghurt: Plain yoghurt or Greek yoghurt works well as a cooling dip for the spiced lamb filling.
  • Add fresh contrast: A little chopped mint, coriander or a pinch of chilli over the yoghurt gives the serving plate more freshness and colour.
  • Make it a meal: Serve with a crisp cucumber salad, pickles or a simple tomato salad to cut through the richness of the pastry.

Instructions

  1. Heat the oven to 200°C (390°F) and set a baking tray inside to warm. Finely chop the onion and crush the garlic.
  2. Heat the sunflower oil in a large frying pan over a medium heat. Add the onion and cook for 6 to 8 minutes until softened and lightly golden, then stir in the garlic for 30 seconds until fragrant.
  3. Add the minced lamb and cook for 6 to 8 minutes, breaking it up, until browned with no pink remaining. Stir in the ground cumin, ground coriander, ground turmeric and chili flakes, and cook for 1 minute.
  4. Stir in the frozen peas and cook for 2 to 3 minutes until hot through. Tip the filling into a bowl and leave to cool until just warm so it does not soften the pastry.
  5. Lay out the phyllo dough sheets and keep them covered with a clean, slightly damp tea towel while you work. Cut the sheets into long strips, then brush lightly with sunflower oil and layer two strips together for strength.
  6. Place a spoonful of filling at one end of each strip and fold into neat triangles, continuing to fold along the strip to enclose the filling. Brush the tops lightly with sunflower oil, then bake on the hot tray for 12 to 15 minutes until golden and crisp.
  7. Serve the samboosa hot with yogurt on the side for dipping. If you like, sprinkle a pinch of chili flakes over the yogurt for a little extra heat.

Recipe notes

Tips

  • Cooling the filling until just warm helps keep the phyllo crisp and makes the parcels easier to fold.
  • If the phyllo starts to dry and crack, cover it again with a slightly damp tea towel and work with a few sheets at a time.
  • For vulnerable groups, use pasteurised yogurt and ensure the lamb is cooked until piping hot throughout.

Substitutions

  • Replace sunflower oil with olive oil for a fruitier finish.
  • Replace yogurt with greek yogurt for a thicker, tangier dip.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 180°C (355°F) for 10 to 12 minutes until piping hot and crisp; freeze baked parcels for up to 2 months and reheat from frozen at 180°C (355°F) for 15 to 18 minutes.
