Pestiños (Honey-Glazed Pastry Fritters)

Pestiños are traditional Spanish pastry fritters with a crisp, blistered shell and a glossy honey coating. Made from a simple olive oil dough scented with cinnamon and orange zest, they are rolled very thin, folded into their recognisable shape and fried until deeply golden before being dipped in warm honey. The result is sweet but not heavy, with citrus, spice and the fruity richness of olive oil coming through beneath the glaze. Often served as a festive sweet or with coffee, they are best enjoyed soon after frying while the pastry still has its delicate crunch.

Why this recipe works

  • Crisp pastry shell: Rolling the dough very thinly helps the fritters cook through quickly and develop a brittle, golden finish.
  • Fragrant dough: Olive oil, orange zest and cinnamon give the pastry more depth than a plain fried dough.
  • Glossy honey coating: Warming the honey with a little water loosens it enough to coat each fritter evenly without making the glaze heavy.

Timing notes

  • Rest the dough before rolling: A short rest relaxes the dough, making it easier to roll thinly and helping the pestiños keep a delicate texture.
  • Best served fresh: The fritters are at their crispest soon after frying and glazing, before the honey has time to soften the pastry.

Texture tips

  • Roll the dough thinly: Aim for a very thin sheet so the pastry blisters and crisps rather than turning dense in the centre.
  • Drain before glazing: Let excess oil drip away briefly after frying so the honey glaze clings cleanly to the surface.

Common mistakes

  • Watch the oil temperature: Keep the oil close to 170°C (340°F); too cool and the pastries absorb oil, too hot and they brown before crisping properly.
  • Do not rush the honey dip: Dip the pestiños while they are still warm so the glaze coats evenly, then let the excess drip back into the pan.

Ingredient notes

  • Use good olive oil: Olive oil is part of the flavour of the dough as well as the frying medium, so a clean-tasting extra virgin oil works well here.
  • Orange zest options: Dried orange zest gives a subtle citrus note, while fresh finely grated zest makes the aroma brighter.

  1. In a mixing bowl, stir together the flour, salt, cinnamon and orange zest. Add 40 ml olive oil and the wine, then mix to a shaggy dough. Knead on a clean work surface for 5 minutes until smooth and elastic.
  2. Cover the dough and let it rest at room temperature so it relaxes. This makes it easier to roll thinly without springing back.
  3. Pour 600 ml olive oil into a large pot and heat to 170°C (340°F). While the oil heats, roll the dough out very thinly, about 2 mm. Cut into small squares or rectangles, then fold two opposite corners towards the centre and press to seal.
  4. Fry the pestiños in batches for 2 to 3 minutes, turning once, until deep golden and crisp. Lift out with a slotted spoon and drain briefly. Keep frying until all are cooked, letting the oil return to temperature between batches.
  5. Warm the honey with the water in a small saucepan over low heat until fluid and steaming, but not boiling. Dip each warm pestiño into the honey, turning to coat, then lift out and let the excess drip back into the pan. Serve once the glaze has set slightly.

Recipe notes

Tips

  • Seal the folded corners firmly; if they open in the oil, the pestiños can lose their shape and cook unevenly.
  • Keep the oil around 170°C (340°F); cooler oil makes greasy pastries, while hotter oil browns the outside before the centre crisps.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised honey or avoid honey glaze.

Substitutions

  • Replace Dry White Wine with water for an alcohol-free dough; add it gradually until the dough comes together.
  • Replace Dried orange zest with finely grated zest from an orange for a fresher citrus aroma.

Storage

  • Refrigerate up to 2 days
  • Pestiños are best eaten the day they are made. Store in an airtight container at cool room temperature for up to 2 days; if they soften, refresh in a 180°C (355°F) oven for 4 to 6 minutes, then glaze again with gently warmed honey if needed.
