Air Fryer Falafel

Falafel are crisp chickpea fritters, widely enjoyed across Middle Eastern cooking as a snack, mezze dish or filling for flatbreads. Their character comes from soaked dried chickpeas, fresh herbs, onion, garlic and warm spices, which create a coarse mixture that cooks up nutty, savoury and aromatic. This air fryer version keeps the recognisable golden crust and tender centre while using only a light coating of oil. Served hot with tahini, they work well as a dipping snack, part of a mezze spread, or tucked into wraps with salad and pickles.

Why this recipe works

  • Crisp without deep-frying: A light coating of oil and the air fryer’s high circulating heat help the falafel brown and crisp while keeping the centre tender.
  • Herby, spiced depth: Parsley, garlic, onion, cumin and coriander give the chickpea mixture its familiar savoury, aromatic falafel flavour.
  • Practical for planning ahead: The chickpeas soak in advance, and cooked falafel can be chilled or frozen for easy reheating later.

Timing notes

  • Plan for soaking: The dried chickpeas need a 12-hour soak before blending, so start them the night before or early in the day.
  • Best served hot: Falafel are at their crispest straight from the air fryer; keep batches warm briefly if needed, but avoid covering them tightly.

Texture tips

  • Drain thoroughly: Excess water makes the mixture heavy and paste-like, so drain the soaked chickpeas very well before processing.
  • Keep the mixture coarse: Pulse until the mixture clumps when pressed, but stop before it turns smooth; a coarse texture helps the falafel hold their shape.
  • Cook in a single layer: Leave space around each falafel so the air can circulate and crisp the surface evenly.

Ingredient notes

  • Use dried chickpeas: This style of falafel relies on soaked dried chickpeas for structure; canned chickpeas are much softer and can make the mixture too wet.
  • Fresh herbs matter: Fresh parsley brings colour and brightness to the mixture, while fresh coriander can be used for a more citrusy, herb-forward version.
  • Warm, not hot: Cumin and coriander provide earthy warmth rather than chilli heat, making these falafel mild but well seasoned.

Make-ahead tips

  • Freeze cooked falafel: Cool completely, then freeze cooked falafel in a sealed container for up to 2 months.
  • Re-crisp in the air fryer: Reheat chilled falafel at 190°C (375°F) for 4 to 6 minutes, or from frozen at 190°C (375°F) for 8 to 10 minutes, until piping hot throughout.

  1. Put the chickpeas in a bowl, cover with plenty of cold water, and stir in the bicarbonate of soda. Leave to soak at room temperature for 12 hours, then drain very well.
  2. Roughly chop the onion, garlic and parsley. Add them to a food processor with the drained chickpeas, cumin, coriander and fine sea salt, then pulse until you have a damp, coarse mixture that holds together when squeezed, scraping down as needed.
  3. Tip the mixture into a bowl and rest for 10 minutes to hydrate. Roll into 16 small balls, pressing firmly so they do not crumble.
  4. Preheat the air fryer to 200°C (390°F) for 3 minutes. Brush or lightly rub the falafel all over with the olive oil.
  5. Air-fry in a single layer for 10 minutes, then turn and cook for 6 to 8 minutes more until deeply golden and crisp outside. Cook in batches if needed, keeping the cooked falafel warm in a low oven.
  6. Serve hot with the tahini for dipping. If the tahini is very thick, loosen it with a little water and a pinch of salt until spoonable.

Recipe notes

Tips

  • Drain the soaked chickpeas extremely well; excess water makes the mixture paste-like and can cause the falafel to slump.
  • If the mixture is crumbly, pulse a little longer until it clumps when pressed, but stop before it becomes a smooth hummus-like paste.
  • For vulnerable groups (young children, older adults, pregnant people, and anyone immunocompromised), ensure the falafel are cooked until piping hot throughout.

Substitutions

  • Replace Fresh parsley with Fresh coriander for a more citrusy, herb-forward falafel.
  • Replace Olive oil with Avocado oil for a more neutral finish.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in an airtight container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until piping hot and crisp. Freeze cooked falafel for up to 2 months; reheat from frozen at 190°C (375°F) for 8 to 10 minutes.
