Crespelle alla Fiorentina (Spinach and Ricotta Crêpes)
Why this recipe works
- Tender crêpe layers: Using thin crespelle instead of pasta sheets gives the bake a lighter, more delicate structure.
- Gentle savoury depth: Nutmeg, Parmesan and garlic-seasoned passata build flavour without overpowering the spinach and ricotta filling.
- Creamy but balanced: Ricotta keeps the centre soft, while tomato sauce and a mozzarella topping prevent the dish from feeling heavy.

Timing notes
- Rest the batter: Resting the crêpe batter helps the flour hydrate, so the crêpes spread more evenly and are less likely to tear.
- Let it settle before serving: A short rest after baking helps the ricotta filling firm slightly, making the rolls easier to lift from the dish.
Texture tips
- Dry the spinach well: Press out as much liquid as possible after wilting the spinach; excess moisture can make the filling loose and water down the sauce.
- Cool before filling: Let the crêpes cool slightly before rolling so they handle more cleanly and hold their shape.
- Drain fresh mozzarella: If using fresh mozzarella, drain it well first so the topping melts softly without making the bake watery.
Make-ahead tips
- Prepare the components ahead: The crêpes, filling and sauce can be prepared separately in advance, then assembled when ready to bake.
- Assemble before baking: For the neatest texture, roll the crespelle and add the sauce close to baking time rather than leaving them to soak for too long.
- Freeze baked portions: Cool completely, wrap portions well and freeze. Defrost overnight in the fridge, then reheat in a 180°C (355°F) oven until piping hot.
Authenticity notes
- Florentine style: Crespelle are Italian-style crêpes, and Florentine versions are especially associated with a spinach and ricotta filling.
- Sauce variations: Some versions include béchamel as well as or instead of tomato; this version keeps the finish lighter with passata and mozzarella.
- Baked family-style: Arranged in a baking dish and served hot, crespelle work much like a pasta al forno: comforting, sliceable and easy to share.

Tomato sauce and topping
Instructions
- Make the crêpe batter: whisk the plain flour and fine sea salt in a bowl, then whisk in the eggs. Gradually whisk in the whole milk until smooth, then whisk in 1 tbsp of the extra virgin olive oil. Rest the batter for 20 minutes.
- Meanwhile, cook the spinach in a large frying pan over medium heat until fully wilted. Tip into a sieve-strainer and press firmly to remove as much liquid as possible, then finely chop. Set aside to cool slightly.
- Make the filling: in a mixing bowl, combine the ricotta, Parmesan, ground nutmeg and black pepper. Stir in the chopped spinach and taste for seasoning, adding a pinch more fine sea salt if needed. Set aside.
- Cook the crêpes: heat a nonstick frying pan over medium heat and brush lightly with a little of the remaining olive oil. Pour in a small ladle of batter and swirl to coat the base, then cook for about 1 minute until set and lightly golden underneath; flip and cook 30 seconds more. Repeat to make 10 to 12 crêpes, stacking them on a plate as you go.
- Make the tomato sauce: finely chop the garlic. Warm the remaining olive oil in a saucepan over low-medium heat, cook the garlic for 30 to 60 seconds until fragrant, then stir in the tomato passata and a pinch of fine sea salt. Simmer for 10 minutes until slightly thickened.
- Heat the oven to 200°C (390°F). Spread about one third of the tomato sauce over the base of a baking dish. Spoon the filling along the centre of each crêpe, roll up, and arrange seam-side down in the dish.
- Spoon the remaining tomato sauce over the rolled crêpes. Tear or slice the mozzarella and scatter over the top, then finish with a light sprinkle of the remaining Parmesan. Bake for 20 to 25 minutes until bubbling and lightly golden in places.
- Rest for 5 minutes so the filling settles, then serve hot. If you like, grind over a little extra black pepper at the table.
Recipe notes
Tips
- Squeeze the spinach very dry before mixing with the ricotta, otherwise the filling can turn watery and split the sauce.
- For neat rolls, let the crêpes cool for a few minutes before filling so they do not tear.
- If serving vulnerable groups, use pasteurised eggs and ensure the baked dish is piping hot throughout.
Substitutions
- Replace Parmesan with Grana Padano for a slightly milder, sweeter finish.
- Replace ricotta with well-drained cottage cheese for a lighter, slightly tangier filling.
- Replace mozzarella with fresh mozzarella for a softer, creamier topping; drain it well first so the bake stays saucy, not watery.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; add a splash of water to the dish if the sauce looks dry. Freeze portions well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
