Baked Macaroni and Cheese with Breadcrumb Crust
Why this recipe works
- Creamy sauce: A flour-and-butter roux thickens the milk into a smooth base that coats the macaroni evenly.
- Crisp topping: Buttery breadcrumbs are added near the end of baking so they turn golden without drying out the pasta underneath.
- Balanced richness: Dijon mustard and mature cheddar bring enough sharpness to keep the cheese sauce savoury rather than heavy.

Ingredient notes
- Use mature cheddar: Mature cheddar gives the sauce a deeper, sharper flavour than mild cheddar, which can taste flat once baked.
- Keep the seasoning subtle: Nutmeg, mustard and black pepper should support the cheese rather than dominate the sauce.
Texture tips
- Stop the pasta early: Cook the macaroni just shy of al dente so it finishes in the oven without becoming soft.
- Add breadcrumbs late: Scattering the breadcrumbs over the bubbling pasta keeps the topping crisp while the centre stays creamy.
Make-ahead tips
- Assemble in advance: The macaroni and sauce can be assembled ahead and chilled before baking; add the breadcrumb topping just before it goes into the oven.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, adding a little milk if the sauce looks dry.
- Freeze in portions: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating.
Common mistakes
- Adding milk too quickly: Whisk the milk in gradually so the roux loosens smoothly and the sauce does not turn lumpy.
- Overheating the cheese: Take the pan off the heat before stirring in the cheddar to help the sauce stay glossy rather than oily.
- Serving immediately: Let the bake stand briefly so the sauce settles and the portions hold together more cleanly.
Equipment you'll need
Ingredients
Instructions
- Heat the oven to 200°C (390°F). Bring a large pot of well-salted water to the boil.
- Cook the macaroni until just shy of al dente, about 1 minute less than the packet suggests. Drain well in a colander and set aside.
- In a saucepan over medium heat, melt 40 g of the butter. Whisk in the flour and cook for 1 minute until it smells biscuity but has not browned.
- Gradually whisk in the milk until smooth, then bring to a gentle simmer, whisking often. Cook for 4 to 6 minutes until thick enough to coat the back of a spoon.
- Take the pan off the heat and whisk in the Dijon mustard, salt, nutmeg and pepper. Stir in the cheddar cheese until melted and glossy.
- Fold the macaroni into the cheese sauce, then scrape into a baking dish and level the top. Bake for 15 minutes until bubbling around the edges.
- Meanwhile, melt the remaining 20 g butter and mix with the breadcrumbs until evenly coated. Scatter over the bubbling macaroni cheese and bake for 8 to 10 minutes until golden and crisp.
- Leave to stand for 5 minutes before serving so it sets slightly and slices more neatly. Serve hot.
Recipe notes
Tips
- Undercook the macaroni slightly so it stays tender after baking rather than turning soft.
- For the neatest slices, let it stand the full 5 minutes, then cut with a sharp knife and lift with a spatula.
Substitutions
- Replace Cheddar cheese with Gruyere cheese for a nuttier, slightly sweeter finish.
- Replace Dijon mustard with whole-grain mustard for a milder heat and a little texture.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven until piping hot; add a splash of Whole milk before reheating if it looks dry. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
