Tostones con Carne Molida (Fried Plantains with Spiced Minced Beef)

Twice-fried green plantains form the crisp, savoury base of this Latin American-style snack or informal dinner. Tostones are made from firm green plantains, fried until tender, flattened, then fried again so the edges become golden and crunchy while the centre stays substantial. Here they are topped with carne molida: minced beef simmered with onion, garlic, tomato, red pepper, cumin and smoked paprika until saucy and well seasoned. Fresh coriander and lime keep the dish bright, cutting through the richness of the beef and fried plantain. Serve straight away so the tostones stay crisp under the warm topping.

Why this recipe works

  • Crisp plantain base: Twice-frying gives the green plantains a golden, crunchy exterior while keeping the inside sturdy enough to hold the topping.
  • Deep savoury topping: Browning the beef first builds flavour before the onion, pepper, garlic, tomato and spices turn it into a saucy mince.
  • Bright finish: Fresh coriander and lime cut through the richness of the fried plantain and beef, keeping each bite balanced.

Ingredient notes

  • Choose green plantains: Firm green plantains are essential for tostones; ripe yellow plantains are sweeter and softer, so they will not flatten or crisp in the same way.
  • First fry until just tender: The first fry should soften the plantain enough to flatten cleanly without breaking apart.

Texture tips

  • Fry in small batches: Give the oil time to recover between batches so the plantains crisp rather than absorb oil.
  • Top just before serving: Spoon the beef over the tostones at the last moment, or serve it alongside if the platter needs to sit for a few minutes.

Make-ahead tips

  • Make the beef in advance: The minced beef topping can be cooked ahead and reheated with a splash of water until piping hot.
  • Keep components separate: Store the beef separately from the tostones to protect the plantains’ crunch; the assembled dish is best eaten immediately.

Serving ideas

  • Finish with lime: A squeeze of lime just before eating sharpens the beef topping and balances the fried plantain.
  • Make it a fuller meal: Serve with rice, beans or a simple chopped salad if you want to turn the platter into dinner.

  1. Peel the plantains and cut into 2 cm-thick rounds. Finely chop the onion and red pepper, crush the garlic, and dice the tomatoes. Roughly chop the coriander and cut the lime into wedges.
  2. Heat the vegetable oil in a saucepan over medium heat to 175°C (350°F). Fry the plantain rounds in batches for 3 to 4 minutes until pale golden and just tender, then lift out with tongs. Set aside for 5 minutes to cool slightly.
  3. While the plantains cool, heat a large frying pan over medium-high heat. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated. Season with half the fine sea salt and the black pepper.
  4. Add the onion and red pepper to the beef and cook for 4 to 5 minutes until softened. Stir in the garlic, ground cumin and smoked paprika and cook for 1 minute until fragrant. Add the tomatoes and water, then simmer for 6 to 8 minutes until saucy and well seasoned; stir in most of the coriander, reserving a little to finish.
  5. Increase the oil temperature to 190°C (375°F). Flatten each fried plantain round to about 1 cm thick using the base of a glass or a sturdy spatula. Fry again in batches for 2 to 3 minutes until deep golden and crisp, then drain well and season with the remaining fine sea salt.
  6. Arrange the tostones on a platter and spoon the spiced minced beef over the top. Finish with the reserved coriander and serve with lime wedges for squeezing. Eat straight away while the tostones are crisp.

Recipe notes

Tips

  • For the crispest tostones, make sure the oil is back up to temperature before each batch, and do not overcrowd the pan.
  • If your plantains are very firm, give them an extra minute on the first fry so they flatten without cracking.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the minced beef until piping hot throughout.

Substitutions

  • Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
  • Replace Ground cumin with Garam masala for a warmer, more aromatic spice profile.
  • Replace Fresh coriander with Fresh flat-leaf parsley if you prefer a less citrusy herb.

Storage

  • Refrigerate up to 2 days
  • Store the minced beef separately from the tostones in an airtight container in the fridge. Reheat the beef in a frying pan with a splash of water until piping hot; re-crisp the tostones in a 200°C (390°F) oven for 6 to 8 minutes.
