Stuffed Fried Plantains with Spiced Minced Beef

Ripe plantains lend themselves to savoury fillings because their natural sweetness deepens as they fry, turning golden at the edges while staying soft enough to press open. Here they become a generous Latin American-style stuffed plantain: sweet, warm fruit wrapped around minced beef seasoned with onion, garlic, cumin and sweet paprika. A squeeze of lime cuts through the richness, while coriander adds a fresh finish. Served hot from the pan, the dish works as a hearty side or a casual dinner with extra lime at the table.

Why this recipe works

  • Sweet-soft contrast: Very ripe plantains fry to a soft, caramelised texture that balances the savoury minced beef filling.
  • Warm savoury filling: Onion, garlic, cumin, and sweet paprika build a rounded base without overpowering the natural sweetness of the plantain.
  • Fresh finish: Lime juice and coriander cut through the richness and keep the dish bright rather than heavy.

Texture tips

  • Use very ripe plantains: Plantains with mostly black skins will soften properly in the pan and press open more easily without cracking.
  • Warm briefly after stuffing: Return the stuffed plantains to the pan just long enough to heat through; extended cooking will make them softer.

Common mistakes

  • Avoid frying too hot: If the plantains darken before they soften, lower the heat so the centres have time to become tender.
  • Press while warm: Shape the plantains soon after frying, while they are still pliable; cooled plantains are more likely to split.

Serving ideas

  • Finish with lime and herbs: Serve with reserved coriander and lime wedges so each portion can be sharpened to taste.
  • Round out the plate: Pair with a crisp salad, rice, or beans to turn the stuffed plantains into a fuller meal.

  1. Peel the plantains and cut each one in half crossways. Finely chop the onion, crush the garlic, and roughly chop the coriander. Cut the lime into wedges.
  2. Heat the sunflower oil in a large frying pan over medium heat. Fry the plantain pieces for 2 to 3 minutes per side, until deep golden and softened. Transfer to a plate.
  3. While the plantains are still warm, press each piece to open it into a thick oval, using the back of a spatula. Aim to create a pocket without tearing all the way through. Set aside.
  4. Carefully pour off all but about 2 tbsp of oil from the pan and return it to medium heat. Add the onion and cook for 5 to 6 minutes until soft and lightly golden. Stir in the garlic, cumin, and sweet paprika for 30 seconds until fragrant.
  5. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and cooked through. Squeeze in a little lime juice to brighten the filling, then stir through most of the coriander, reserving a little for serving. Taste and adjust with more lime if you like it sharper.
  6. Spoon the beef mixture into the pressed plantains, packing it in gently. Return the stuffed plantains to the pan and warm for 2 to 3 minutes, turning once, until hot through. Serve straight away with the remaining coriander and lime wedges.

Recipe notes

Tips

  • Choose very ripe plantains with mostly black skins; they fry up sweeter and are easier to press without cracking.
  • If the plantains are browning too quickly, lower the heat slightly so they soften before the outside gets too dark.
  • For best texture, press the plantains while warm; once cool they are more likely to split when opened.

Substitutions

  • Replace sunflower oil with vegetable oil for frying.
  • Replace fresh coriander with fresh flat-leaf parsley for a different herbal finish.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly and refrigerate in a sealed container. Reheat in a frying pan over medium-low heat with a small splash of water until piping hot; the plantains will soften further on reheating.
