Air Fryer Ham and Cheese Croquettes
Why this recipe works
- Creamy centre: A very thick béchamel firms up in the fridge, then softens into a rich, creamy filling as the croquettes heat through.
- Crisp coating: Breadcrumbs and a light coating of oil help the air fryer create a golden shell without deep-frying.
- Savoury depth: Cured ham, cheese, toasted flour and a little nutmeg build a rounded, savoury filling rather than a plain white sauce.
- Easy to prepare ahead: The filling needs chilling before shaping, which makes the recipe naturally suited to staged preparation.

Timing notes
- Chill until truly firm: The béchamel should feel dense and hold its shape when scooped. If it slumps, give it longer in the fridge before coating.
- Best served straight away: Croquettes are at their best just after air frying, when the coating is crisp and the centre is hot and creamy.
Make-ahead tips
- Make the filling ahead: The béchamel mixture can be chilled in advance, covered closely so the surface does not dry out.
- Freeze before air frying: Freeze the breaded, uncooked croquettes on a tray, then pack airtight. Cook from frozen, allowing a little extra time.
- Reheat for crispness: Reheat in the air fryer at 180°C (355°F) until piping hot, which helps refresh the breadcrumb coating.
Common mistakes
- Stopping the béchamel too soon: The mixture needs to become very thick and pull away from the pan; a loose sauce will be difficult to shape.
- Overfilling the air fryer: Arrange the croquettes in a single layer so hot air can circulate and the coating browns evenly.
- Coating before chilling properly: Warm or soft filling can smear into the breadcrumbs, so wait until the mixture is firm before shaping.
Ingredient notes
- Chop the ham finely: Small pieces of cured ham distribute more evenly through the béchamel and make the croquettes easier to shape.
- Use nutmeg subtly: Nutmeg is a classic seasoning for béchamel; it should round out the dairy richness rather than dominate.
- Cheese choice: Cheddar gives a familiar savoury sharpness, while Gruyere brings a nuttier flavour and a slightly more traditional feel.

Ingredients
Instructions
- Finely chop the cured ham and grate the cheddar cheese. Set a shallow dish ready for chilling the béchamel.
- In a saucepan over medium heat, melt the unsalted butter. Add the plain flour and cook, whisking constantly, for 2 to 3 minutes until it smells lightly toasted but has not browned.
- Gradually whisk in the whole milk, a little at a time, until smooth. Cook, whisking, for 6 to 8 minutes until very thick and the mixture pulls away from the pan; season with ground nutmeg, fine sea salt and black pepper.
- Take off the heat and stir in the cured ham and cheddar cheese until evenly distributed. Scrape into the dish and spread into an even layer; cool for 10 minutes, then cover the surface closely with baking paper to prevent a skin forming.
- Chill until firm enough to shape, at least 60 minutes. The mixture should feel dense and hold its shape when scooped.
- Beat the eggs in a bowl and put the breadcrumbs in a second bowl. Shape the chilled mixture into 12 croquettes, then coat each one in egg and roll in breadcrumbs, pressing gently so the coating sticks.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Lightly brush or rub the croquettes with olive oil, then arrange in a single layer in the basket.
- Air fry for 10 to 12 minutes, turning halfway, until crisp and deeply golden. Serve straight away while the centre is creamy and hot.
Recipe notes
Tips
- Cook the flour and butter well before adding the milk; it keeps the béchamel tasting rich, not floury.
- If the mixture feels too soft to shape, chill it for an extra 20 to 30 minutes so the croquettes stay neat in the air fryer.
- For food safety, ensure the croquettes are piping hot all the way through before serving.
Substitutions
- Replace Cheddar cheese with Gruyere cheese for a nuttier, more traditional croquette filling.
- Replace Olive oil with Vegetable oil for a more neutral finish.
Storage
- Refrigerate up to 2 days
- Cool, then chill in an airtight container. Reheat in the air fryer at 180°C (355°F) for 6 to 8 minutes until piping hot; freeze breaded, uncooked croquettes on a tray, then pack airtight and cook from frozen, adding 3 to 5 minutes.
