Pimm’s Cup (Summer Fruit Cup) with Lemonade, Cucumber and Mint
Why this recipe works
- Ready in minutes: Everything is assembled directly in the jug, so there is no shaking, straining or cooking required.
- Fresh and bright: Cucumber, citrus, berries and mint lift the sweet lemonade and give the drink its recognisable summer character.
- Easy to share: Making it by the jug keeps serving simple and ensures each glass gets fruit, mint, ice and fizz.

Timing notes
- Serve straight away: Add the ice and lemonade just before serving so the drink stays cold, lively and fizzy.
- Prep the fruit first: Slice the cucumber, strawberries and orange before adding the liquids, then stir gently at the end.
Ingredient notes
- Use well-chilled lemonade: Cold lemonade keeps the jug refreshing without relying on too much ice, which can dilute the drink quickly.
- Bruise the mint lightly: Press the mint gently with a spoon to release aroma without tearing the leaves and making the drink taste bitter.
Cocktail variations
- Make it less sweet: Use sparkling water in place of lemonade for a lighter, drier version.
- Change the fruit: Swap strawberries for raspberries for a sharper berry note, or use lime instead of orange for a brighter citrus finish.
Alcohol-free alternatives
- Serve as a flexible jug: Keep the fruit, mint and ice in the jug, then add Pimm’s only to individual glasses for those drinking alcohol.
- Alcohol-free option: For a simple non-alcoholic version, pour chilled lemonade or sparkling water over the cucumber, fruit and mint.

Instructions
- Thinly slice the cucumber. Hull and halve the strawberries, then cut the orange into thin rounds or wedges.
- Add the cucumber, strawberries, orange and mint to a large jug and gently bruise the mint with the back of a spoon to release its aroma. Fill the jug with the ice.
- Pour in the Pimm’s, then top up with the lemonade and stir gently to combine without knocking out too much fizz. Serve straight away in ice-filled glasses, making sure each glass gets plenty of fruit and mint.

Tips
- Chill the lemonade well so the drink stays cold without needing excessive ice.
- Bruise the mint lightly rather than tearing it, so you get fragrance without bitterness.
- If serving to children or anyone avoiding alcohol, keep the fruit-and-mint base and ice in the jug, then add Pimm’s to individual glasses as needed.
Substitutions
- Replace Lemonade with Sparkling water for a less sweet, lighter cup.
- Replace Strawberry with Raspberry for a sharper berry note.
- Replace Orange with Lime for a brighter citrus finish.
Storage
- Refrigerate up to 1 days
- Best served immediately. If needed, refrigerate the fruit-and-mint base (without ice, Pimm’s or Lemonade) for up to 1 day; add ice and liquids just before serving to keep it fresh and fizzy.
