Jamaican Vegetable Patties (Turmeric Pastry)

With their golden turmeric pastry and half-moon shape, Jamaican vegetable patties bring the familiar character of Caribbean patties into a vegetarian filling. The crisp, flaky crust wraps a savoury mixture of cabbage, carrot and spring onion, seasoned with thyme, allspice, black pepper and chilli for warmth rather than heaviness. They are best served warm, when the pastry is still crisp and the filling has settled, making them suited to lunches, snacks, party platters or a casual meal with salad, rice and peas, or a sharp slaw alongside.

Why this recipe works

  • Flaky, crisp pastry: Cold butter, a short chill and a hot baking tray help the turmeric pastry bake up crisp rather than heavy.
  • Aromatic filling: Thyme, allspice, black pepper and chilli give the simple vegetable filling the warm, savoury character associated with Jamaican patties.
  • Easy to prepare ahead: The patties can be baked in advance, chilled or frozen, then reheated until hot and crisp.

Adjust the heat

  • For a gentler filling: Remove the chilli seeds and use a smaller amount, especially if serving children or anyone sensitive to heat.
  • For more heat: Use a hotter chilli such as Scotch bonnet and keep some seeds in the filling if you want a more assertive Jamaican patty-style kick.
  • Keep the spice rounded: Let the chilli cook briefly with the thyme and allspice so the heat blends into the vegetables rather than tasting sharp or raw.

Timing notes

  • Chill the pastry: The dough needs time in the fridge so the butter firms up and the pastry is easier to roll and shape.
  • Cool the filling first: Warm filling can soften the butter in the dough, making the patties harder to seal and less flaky after baking.
  • Serve warm: The patties are best shortly after baking, once they have cooled just enough for the pastry to set and the filling to be comfortable to eat.

Texture tips

  • Handle the dough lightly: Mix only until the pastry comes together; overworking the dough can make the baked patties tough.
  • Keep the filling dry: Cook off excess moisture from the cabbage and carrot before filling, as a wet mixture can soften the pastry.
  • Bake on a hot tray: Preheating the baking tray helps the underside of each patty start crisping as soon as it goes into the oven.

Ingredient notes

  • Use allspice, not mixed spice: Allspice is a single spice with warm clove, cinnamon and pepper notes; mixed spice will give a different, sweeter flavour.
  • Shred the cabbage finely: Thinly shredded cabbage softens quickly and makes a neater filling that is easier to seal inside the pastry.
  • Turmeric is mainly for colour: Ground turmeric gives the pastry its golden colour and a mild earthy note without turning the dough into a curry-flavoured crust.

  1. Put the flour, turmeric and salt in a mixing bowl and whisk to combine. Rub in the cold butter until the mixture looks like coarse crumbs with a few pea-sized pieces left.
  2. Add the cold water and mix just until a dough forms; do not overwork it. Shape into a flat disc, cover, and chill for 30 minutes so the pastry stays flaky.
  3. Meanwhile, slice the spring onions, grate the carrot, and finely shred the cabbage. Strip the thyme leaves from the sprigs and finely chop the red chilli, removing the seeds if you want less heat.
  4. Melt the butter in a frying pan over medium heat. Cook the spring onions for 1 minute, then add the carrot and cabbage and cook for 6 to 8 minutes until softened but not wet.
  5. Stir in the thyme, chilli, allspice, black pepper and salt, and cook for 1 minute until fragrant. Tip the filling onto a plate and cool for 10 minutes so it does not melt the pastry.
  6. Heat the oven to 200°C (390°F) and set a baking tray inside to heat. On a lightly floured surface, roll the chilled dough to about 3 mm thick and cut into 12 cm rounds.
  7. Divide the cooled filling between the rounds, keeping it to one side of each circle. Fold over to make half-moons, press the edges firmly to seal, then crimp with a fork.
  8. Arrange the patties on the hot tray and bake for 22 to 26 minutes until crisp and deeply golden. Cool for 5 minutes before serving warm.

Recipe notes

Tips

  • Keep the butter and water cold and handle the dough lightly; warm butter makes the pastry tough rather than flaky.
  • If the filling looks watery in the pan, cook it for a couple more minutes until the moisture evaporates; a dry filling helps the patties stay crisp.
  • Scotch bonnet level heat can be intense; if serving to children, remove the chilli seeds and use a smaller amount.

Substitutions

  • Replace Unsalted butter with Plant-based butter for a dairy-free pastry and filling.
  • Replace Red chili pepper with Green chili pepper for a slightly different heat and flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 180°C (355°F) for 10 to 12 minutes until piping hot and crisp. Freeze baked patties well wrapped for up to 2 months; reheat from frozen at 180°C (355°F) for 18 to 22 minutes.
