Samak Bil Tahini (Baked Fish with Tahini Sauce)
Why this recipe works
- Bright, balanced sauce: Lemon cuts through the richness of the tahini, keeping the sauce creamy without feeling heavy.
- Simple layered flavour: Onion, garlic and cumin season the fish as it bakes, giving the finished dish more depth than the short ingredient list suggests.
- Efficient cooking: The fish bakes while the tahini sauce is whisked together, keeping active preparation short and straightforward.

Ingredient notes
- Choose firm white fish: Cod, haddock or a similar mild white fish works well because it flakes cleanly and lets the tahini sauce stand out.
- Tahini thickness varies: Some tahini is much thicker than others, so add the water gradually and whisk until the sauce is smooth and pourable.
- Adjust the lemon at the end: Taste the sauce before baking and sharpen it with a little more lemon juice if the tahini tastes too rich.
Texture tips
- Keep the fish moist: Remove the dish from the oven as soon as the fish flakes easily; leaving it longer can make lean white fish dry.
- Whisk past the thick stage: Tahini can seize when lemon is added, but continued whisking with gradual water brings it back to a glossy sauce.
Serving ideas
- Serve with rice or flatbread: Plain rice, bulgur or warm flatbread are useful for catching the tahini sauce.
- Finish with herbs and lemon: Fresh parsley and lemon wedges add colour and brightness just before serving.
Common mistakes
- Overbaking the fish: The fish should be just opaque before the sauce goes on, as it continues cooking during the second bake.
- Using sauce that is too thick: A very thick tahini sauce will not coat the fish evenly, so loosen it gradually until it can be poured.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Thinly slice the onion, and crush the garlic.
- Spread the onion in a baking dish and drizzle with the olive oil. Sprinkle over half the salt, the pepper, and the cumin, then toss to coat.
- Nestle the fish fillets among the onions and rub the crushed garlic over the top. Season with the remaining salt, then bake for 12 to 15 minutes, until the fish is just turning opaque at the thickest part.
- Meanwhile, whisk the tahini with the juice of half the lemon, then whisk in the water a little at a time until smooth and pourable. Taste and add a little more lemon juice if you want it sharper.
- Pour the tahini sauce over the fish and onions, coating the surface evenly. Return to the oven for 10 to 12 minutes, until the sauce is lightly golden at the edges and the fish flakes easily.
- Finely chop the parsley and scatter it over the top. Cut the remaining lemon into wedges and serve alongside.
Recipe notes
Tips
- If the tahini sauce thickens too much when you add lemon, keep whisking and add a splash more water until it turns smooth and glossy.
- For the best texture, take the fish out of the oven as soon as it flakes easily; overbaking will dry it out.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the fish is cooked until piping hot throughout.
Substitutions
- Replace white fish fillet with cod fillet or haddock fillet for a similar flaky result.
- Replace fresh parsley with fresh coriander for a more herbal, citrusy finish.
- Replace lemon with lime for a slightly sharper, more aromatic sauce.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 10 to 15 minutes until piping hot; add a splash of water if the tahini sauce has thickened.
