Kerstrollade met Jus (Roast Pork Roll with Red Wine Gravy)
Why this recipe works
- Built-in savoury depth: Garlic, mustard and thyme season the pork as it roasts, while the browned pan juices form the flavour base for the jus.
- Glossy pan gravy: Whisking flour into the roasting fat before adding wine and stock gives the jus body without making it heavy.
- Easy to carve and serve: A boneless pork loin roast rests well and slices neatly, making it practical for a shared dinner.

Timing notes
- Rest before carving: Give the pork the full resting time so the juices settle and the slices hold together cleanly.
- Slice just before serving: Carve the roast close to serving time and spoon over the hot jus while the pork is still warm.
Ingredient notes
- Choose an even roast: A compact, evenly shaped boneless pork loin cooks more predictably and gives tidier slices.
- Wine changes the jus: Red wine gives a deeper, richer gravy; dry white wine makes the jus lighter and slightly sharper.
Common mistakes
- Do not rely on time alone: Use a thermometer at the thickest part of the pork, as loin can dry out if roasted beyond the target temperature.
- Avoid boiling the jus hard: Keep the gravy at a gentle simmer so it reduces evenly and stays smooth and glossy.
Make-ahead tips
- Store pork and jus separately: Chill the sliced pork and gravy in separate sealed containers so the meat does not sit in thickening sauce.
- Reheat gently: Warm the pork with a little jus until piping hot, then reheat the remaining gravy gently and whisk to smooth.

Instructions
- Heat the oven to 180°C (355°F). Pat the pork dry, then season all over with the fine sea salt and black pepper. Peel and finely grate the garlic, then mix it with the Dijon mustard.
- Rub the mustard mixture all over the pork, then tuck the fresh thyme sprigs against the surface. Put the pork in a roasting pan and dot with the unsalted butter. Roast for 60 to 75 minutes, or until the thickest part reaches 63°C (145°F) on a thermometer.
- Transfer the pork to a warm plate and rest for 15 minutes. Pour off all but about 2 tablespoons of fat from the roasting pan, keeping the browned bits and juices. Discard the thyme sprigs if they have gone very dark.
- Set the roasting pan over a medium heat on the hob and whisk in the plain flour for 1 minute. Slowly whisk in the red wine, scraping up the browned bits, then add the beef stock. Simmer for 8 to 10 minutes until glossy and lightly thickened, then taste and adjust with a pinch more fine sea salt and black pepper if needed.
- Slice the pork and serve with the hot jus spooned over. If the gravy thickens too much as it stands, whisk in a splash of hot water from the kettle to loosen it. Serve straight away.
Recipe notes
Tips
- For neat slices, rest the pork the full 15 minutes so the juices settle before carving.
- If you are serving vulnerable groups, cook the pork to 70°C (160°F) and rest as directed for extra reassurance.
- Keep the jus at a gentle simmer rather than a hard boil so it stays smooth and glossy.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
- Replace red wine with dry white wine for a lighter, slightly sharper jus.
- Replace fresh thyme with fresh rosemary for a more resinous, festive flavour.
Storage
- Refrigerate up to 3 days
- Cool the pork and jus quickly, then refrigerate separately in sealed containers. Reheat sliced pork in a 180°C (355°F) oven with a spoonful of jus until piping hot, and reheat the remaining jus gently in a saucepan, whisking to smooth.
