Roast Chicken with Bread Sauce and Roast Potatoes

A traditional British roast chicken dinner brings together crisp-skinned poultry, golden roast potatoes, bread sauce and gravy made from the pan juices. The dish is as much about texture as flavour: juicy carved chicken, potatoes roughed up before roasting for crunchy edges, and a warm, spoonable bread sauce infused with onion, cloves, bay and peppercorns. The gravy rounds everything out with savoury depth from the roasting tin. Familiar, generous and well suited to Sunday lunch or a special family meal, it delivers the classic roast-dinner combination of rich meat, creamy sauce, crisp potatoes and plenty of gravy for serving at the table.

Why this recipe works

  • Good texture contrast: Crisp chicken skin and crunchy roast potatoes are balanced by soft, creamy bread sauce and glossy gravy.
  • Built-in savoury depth: The roasting juices form the base of the gravy, capturing the browned flavour from the chicken pan.
  • Classic bread sauce method: Infusing the milk with onion, cloves, bay and peppercorns gives the sauce its recognisable gentle spice before the bread thickens it.

Timing notes

  • Rest before carving: Resting the chicken for 15 minutes helps the juices settle, making the meat easier to carve and less likely to dry out.
  • Use the roasting time well: The potatoes and bread sauce can be prepared while the chicken roasts, so the full dinner comes together without a long final rush.
  • Serve hot: Roast potatoes are at their best straight from the oven, so keep them hot while the chicken rests and the gravy is finished.

Texture tips

  • For crisper potatoes: After boiling, shake the drained potatoes in the colander to roughen the edges, then let them steam-dry before roasting.
  • Avoid pale roast potatoes: Give the potatoes enough space in the tray so they roast rather than steam, turning once for even browning.
  • Keep the bread sauce smooth: Once the bread is added, cook gently and stir often; a hard boil can make the sauce catch or turn heavy.

Ingredient notes

  • Use slightly stale white bread: Bread that is a little stale absorbs the infused milk more evenly and gives the sauce a thicker, spoonable texture.
  • Butter matters here: Butter seasons the chicken skin and enriches the bread sauce, while oil helps the potatoes roast cleanly and evenly.
  • Use the pan juices: The browned juices left in the roasting pan are essential for a well-flavoured gravy, so avoid discarding them with the excess fat.

Authenticity notes

  • Bread sauce and roast poultry: Bread sauce is a traditional British accompaniment to roast poultry, valued for its mild spice and soft, creamy texture.
  • Serve at the table: Carve the chicken and pass the bread sauce and gravy separately so each serving can be adjusted to taste.

  1. Heat the oven to 220°C (430°F). Pat the chicken dry, then rub all over with 30 g of the butter and 1 tsp of the fine sea salt. Put the chicken in a roasting pan and roast for 20 minutes to start crisping the skin.
  2. Meanwhile, peel the potatoes and cut into large chunks. Boil in a large pot of salted water for 8 minutes, then drain well in a colander and shake to roughen the edges. Leave to steam-dry for 2 minutes.
  3. Tip the potatoes into a roasting tray, drizzle with the sunflower oil, and season with 0.5 tsp of the fine sea salt. Turn to coat, then add the tray to the oven under the chicken. Roast, turning once, until deeply golden and crisp.
  4. Reduce the oven to 190°C (375°F). Continue roasting the chicken until the thickest part of the thigh reaches 74°C (165°F) and the juices run clear, about 45 to 55 minutes more. If the skin is browning too quickly, spoon a little pan fat over the breast.
  5. While the chicken roasts, make the bread sauce: peel the onion and stud it with the whole cloves. Put the onion in a saucepan with the whole milk, bay leaves and black peppercorns, then bring just to a gentle simmer. Take off the heat, cover, and leave to infuse for 15 minutes.
  6. Remove the onion, bay leaves and peppercorns from the milk. Tear the white bread into small pieces and stir into the warm milk, then return to a low heat and cook for 8 to 10 minutes, stirring, until thick and spoonable. Stir in the remaining 30 g butter and season with the remaining 0.5 tsp fine sea salt.
  7. When the chicken is done, lift it onto a board and rest for 15 minutes. Pour off most of the fat from the roasting pan, leaving the browned juices behind. Keep the potatoes in the oven to stay hot.
  8. Set the roasting pan over a medium heat on the hob. Stir in the plain flour and cook for 1 minute, scraping up the sticky bits, then gradually whisk in the chicken stock. Simmer for 3 to 5 minutes until glossy and lightly thickened, then strain if you like for a smoother gravy.
  9. Carve the chicken and serve with the roast potatoes, bread sauce and gravy. Spoon a little gravy over the chicken and pass the rest at the table. Serve everything piping hot.

Recipe notes

Tips

  • For extra-crisp potatoes, make sure they steam-dry after draining, then roast in a well-heated tray so the oil is hot when the potatoes go in.
  • Keep the bread sauce just below a simmer once the bread is added; boiling can make it catch and turn gluey.
  • Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, ensure the chicken reaches 74°C (165°F) in the thickest part of the thigh.

Substitutions

  • Replace White bread with crusty white bread for a slightly more textured bread sauce.
  • Replace Sunflower oil with Olive oil for a fruitier flavour on the roast potatoes.
  • Replace Whole milk with Milk and cream for a richer, more luxurious bread sauce.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in airtight containers. Reheat chicken and potatoes in a 180°C (355°F) oven until piping hot; warm the bread sauce and gravy gently in a saucepan, adding a splash of whole milk or chicken stock if they have thickened.
