High-Protein Chicken Tikka Bowl with Quinoa

A chicken tikka bowl takes the familiar flavours of yoghurt-marinated, spice-coated chicken and serves them in a practical grain-bowl format. Here, boneless thighs are coated with garlic, ginger, cumin, coriander, turmeric and lemon, then pan-seared until the edges are lightly charred and the meat stays juicy. Quinoa makes a nutty, protein-rich base, while cucumber, ripe tomato, fresh coriander and lemon wedges keep the bowl bright and crisp. It is a flexible dinner: satisfying enough on its own, easy to prep ahead in parts, and well suited to simple swaps such as chicken breast or olive oil.

Why this recipe works

  • Layered spice: Yoghurt, lemon, garlic, ginger and ground spices season the chicken quickly while keeping the flavour balanced and savoury.
  • Fresh contrast: Warm charred chicken and fluffy quinoa are balanced by crisp cucumber, firm tomato and a final squeeze of lemon.
  • Good for prep: The chicken and quinoa can be stored together, while the fresh toppings are best kept separate until serving.

Timing notes

  • Marinate longer for depth: The chicken can be cooked after a short marination, but a longer rest in the fridge gives the yoghurt and spices more time to season the meat.
  • Rest before slicing: Let the cooked chicken sit briefly before slicing so the juices settle and the pieces stay tender.

Common mistakes

  • Cook the chicken through: Check the thickest part of the thighs with a food thermometer: they must reach at least 74°C (165°F) before resting and slicing, even beneath a thick yoghurt coating.
  • Keep raw marinade separate: Use only the clean yoghurt mixture reserved before adding the raw chicken as dressing, and discard the marinade that touched the chicken.

Make-ahead tips

  • Marinate in advance: The chicken can be marinated ahead and kept chilled until ready to cook.
  • Store fresh toppings separately: Keep cucumber, tomato, coriander and lemon separate from the chicken and quinoa so the bowl stays fresh after reheating.
  • Reheat gently: Warm the chicken and quinoa until piping hot, then add the cold toppings just before serving.

Ingredient swaps

  • Use chicken breast: Chicken breast gives a leaner bowl and cooks faster than thighs; check earlier, but still cook the thickest part to at least 74°C (165°F).
  • Swap the cooking fat: Olive oil can replace ghee for a lighter flavour while keeping the same pan-searing method.

  1. In a mixing bowl, combine the greek yogurt with the garlic and ginger, then stir in the ground cumin, ground coriander, ground turmeric, 1/2 tsp of the fine sea salt and the black pepper. Finely grate in a little lemon zest, squeeze in 1 tbsp lemon juice and mix, then reserve one quarter in a separate clean bowl, cover and refrigerate for the dressing. Add the chicken thighs to the remaining mixture, turn to coat well, then cover and marinate in the fridge while you cook the quinoa.
  2. Rinse the quinoa in a sieve-strainer until the water runs clearer. Tip into a saucepan with the water and the remaining fine sea salt, bring to the boil, then cover and simmer gently for 12 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
  3. Meanwhile, halve the cucumber lengthways and slice, then dice the tomato. Roughly chop the fresh coriander. Cut the remaining lemon into wedges for serving.
  4. Heat the ghee in a large frying pan over a medium-high heat. Lift the chicken from the marinade, letting excess drip back into the bowl, discard the used marinade, and cook for 4 to 6 minutes per side until charred at the edges and the thickest part reaches at least 74°C (165°F) on a food thermometer, cooking longer if needed. Rest on a clean board for 2 minutes, then slice with a clean knife.
  5. Divide the quinoa between two bowls and top with the sliced chicken, cucumber and tomato. Spoon over the clean yoghurt dressing reserved before adding the chicken, then scatter with fresh coriander. Serve with lemon wedges for squeezing over at the table.

Recipe notes

Tips

  • For deeper flavour, marinate the chicken for up to 24 hours in the fridge and keep it chilled until ready to cook.
  • If you are cooking for anyone who is pregnant, elderly, or immunocompromised, use pasteurised greek yogurt; for every diner, check that the thickest part of the chicken reaches at least 74°C (165°F) with a food thermometer.

Substitutions

  • Replace ghee with olive oil for a similar cooking method and a slightly lighter finish.
  • Replace chicken thighs with chicken breast for a leaner bowl; check earlier and take it off the heat once the thickest part reaches at least 74°C (165°F) on a food thermometer.

Storage

  • Refrigerate up to 3 days
  • Store the chicken and quinoa in an airtight container in the fridge and keep the cucumber, tomato and fresh coriander separate. Reheat the chicken and quinoa in a microwave until piping hot, then add the fresh toppings and lemon just before serving.
