Erbsensuppe (German Split Pea Soup with Smoked Pork)
Why this recipe works
- Naturally creamy texture: Split peas break down as they simmer, thickening the soup without the need for blending or cream.
- Deep savoury flavour: Smoked pork, bay leaves, root vegetables, mustard and marjoram build a rich broth with balanced herbal depth.
- Good for make-ahead meals: The soup stores and freezes well, and can be loosened with a little stock when reheated.

Ingredient notes
- Smoked pork gives the base its character: Using smoked pork in one piece lets it flavour the soup as it cooks, then become tender enough to slice or shred back into the pot.
- Keep the vegetables evenly diced: Small, similar-sized pieces of potato, celeriac and carrot cook evenly and give the finished soup a balanced texture.
- Fresh or dried marjoram: Fresh marjoram gives a brighter finish; dried marjoram can be used instead, but should be added more sparingly.
Texture tips
- Let the peas fully soften: The soup becomes creamy when the split peas have properly broken down, so keep the simmer steady rather than rushing the cooking.
- Loosen if needed: If the soup thickens too much, stir in a little hot stock and warm it through until it returns to a spoonable consistency.
Common mistakes
- Do not let the base catch: As the peas collapse, the soup becomes dense and can stick to the bottom of the pot, so stir more often during the final stage.
- Avoid a hard boil: A gentle simmer keeps the pork tender and helps the peas break down evenly without the soup reducing too aggressively.
- Do not over-thin too early: Wait until the peas and vegetables are fully cooked before adjusting the consistency, as the soup naturally thickens towards the end.
Make-ahead tips
- Make ahead for easy meals: Cook the soup fully, cool it quickly and refrigerate it in a sealed container for up to 3 days.
- Freeze in portions: Portion the cooled soup before freezing so it can be defrosted overnight in the fridge and reheated as needed.
- Reheat gently: Warm on the hob, stirring often and adding a little stock if the soup has thickened, until piping hot throughout.

Instructions
- Put the smoked pork neck in a large pot with the split peas, vegetable stock and bay leaves. Bring to the boil, then reduce to a gentle simmer and skim off any foam. Simmer for 45 minutes, stirring now and then so the peas do not catch.
- Meanwhile, peel the celeriac and potatoes, then cut them into small dice. Peel the carrots and dice them to a similar size. Trim and wash the leek well, then slice it.
- Add the celeriac, carrot, leek and potato to the pot, along with the fine sea salt and black pepper. Keep the soup at a steady simmer, stirring more often as it thickens. Cook for 35 to 40 minutes, until the peas have broken down and the vegetables are tender.
- Lift out the pork and bay leaves. Slice or shred the pork, discarding any tough bits, then return the meat to the soup. Stir in the mustard and most of the marjoram, then simmer for 2 minutes and taste for seasoning.
- Ladle into bowls and scatter over the remaining marjoram. If the soup is very thick, loosen with a splash of hot stock and warm through. Serve piping hot.
Recipe notes
Tips
- For the best texture, keep the simmer gentle and stir regularly once the peas start to break down, as thick soups can catch on the base of the pot.
- If serving to anyone vulnerable, make sure the soup is reheated until piping hot throughout.
Substitutions
- Replace celeriac with extra carrot for a slightly sweeter soup.
- Replace fresh marjoram with dried marjoram, using half the amount.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently on the hob, stirring often and adding a little stock if needed, until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
