Köfte (Turkish Beef Meatballs)
Why this recipe works
- Naturally bound texture: Mixing the beef firmly until tacky helps the köfte hold together without breadcrumbs or egg.
- Simple but rounded seasoning: Grated onion, garlic, cumin, paprika and parsley season the meat evenly with warmth, sweetness and freshness.
- Good pan browning: Cooking the köfte in a single layer gives them a savoury browned crust while keeping the centres juicy.

Ingredient notes
- Choosing the beef: Minced beef with a little fat gives a juicier result; very lean mince can make the köfte firmer.
- Grate the onion finely: Grating disperses the onion through the meat and helps season the mixture more evenly than chopped onion.
- Paprika choice: Sweet paprika keeps the flavour warm and mild; hot paprika can be used if you prefer more heat.
Common mistakes
- Do not overcrowd the pan: If the köfte are packed too closely, they steam rather than brown. Cook in batches if needed.
- Watch the heat: If the outside colours before the centres cook through, reduce the heat so the meatballs finish evenly.
- Shape firmly: Loose shaping can cause cracks in the pan, so press each oval together before cooking.
Make-ahead tips
- Shape ahead: The köfte can be shaped in advance and kept covered in the fridge until ready to cook.
- Freeze cooked köfte: Cool completely, then freeze in a sealed container. Defrost overnight in the fridge before reheating.
- Reheat gently: Warm in a covered frying pan with a small splash of water, or reheat in a 180°C (355°F) oven until piping hot.
Serving ideas
- Serve with simple sides: Flatbread, rice, a crisp chopped salad or roasted vegetables all work well with the savoury meatballs.
- Add something cooling: A yoghurt-based sauce or cucumber yoghurt balances the warm spices and browned meat.
- Finish with lemon: A squeeze of lemon brightens the richness of the beef just before serving.

Ingredients
Instructions
- Coarsely grate the onion into a mixing bowl, then grate in the garlic. Finely chop the parsley and add it to the bowl.
- Add the cumin, sweet paprika, fine sea salt and black pepper, then add the minced beef. Mix firmly with your hands for 1 to 2 minutes until the mixture feels tacky and holds together well.
- Shape into 12 oval meatballs, pressing them firmly so they do not crack. Set aside while you heat the pan.
- Heat the olive oil in a large frying pan over medium-high heat. Add the kofte in a single layer and cook for 3 to 4 minutes until well browned underneath.
- Turn and cook for a further 6 to 8 minutes, turning once or twice, until browned all over and cooked through. If they are colouring too quickly, reduce the heat to medium so the centres cook without burning.
- Cut the lemon into wedges. Serve the kofte hot with lemon for squeezing over.
Recipe notes
Tips
- For the juiciest kofte, mix the meat until it turns slightly sticky; this helps them hold together without needing breadcrumbs or egg.
- If your pan is small, cook in two batches so the kofte brown rather than steam; add a splash more olive oil only if the pan looks dry.
- Food safety: make sure the kofte are cooked through and piping hot in the centre before serving.
Substitutions
- Replace minced beef with minced lamb for a richer, more traditional flavour.
- Replace fresh parsley with fresh mint for a brighter, more aromatic kofte.
- Replace sweet paprika with hot paprika for a spicier kofte.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a frying pan over medium heat with a small splash of water, covered, until piping hot, or in a 180°C (355°F) oven for 10 to 12 minutes. Freeze in a sealed container for up to 2 months and defrost overnight in the fridge before reheating.
