Gevulde Koek (Dutch Almond-Filled Cookie)
Why this recipe works
- Tender pastry, dense filling: The buttery dough bakes into a soft, short pastry around a thick almond centre.
- Balanced almond flavour: Ground almonds provide richness, while lemon zest keeps the filling from tasting flat or overly sweet.
- Keeps well: The cookies store neatly in an airtight container and can be brought back to room temperature before serving.

Timing notes
- Chill before shaping: A short chill firms the butter in the dough, making the rounds easier to shape and seal around the almond filling.
- Cool before serving: Let the cookies cool fully so the pastry sets and the almond centre becomes sliceable rather than soft.
Texture tips
- Keep the pastry short: Mix the dough only until it comes together; overworking can make the finished cookie tougher.
- Seal and flatten evenly: Pinching the dough closed and turning it seam-side down helps the cookies bake into neat, even rounds.
Ingredient notes
- Use ground almonds for the filling: Ground almonds create the dense paste-like centre associated with gevulde koek, rather than a loose or crumbly filling.
- Lemon brightens the paste: A little lemon zest balances the sugar and almond richness without making the filling taste sharply citrusy.
Authenticity notes
- Serve with coffee or tea: Gevulde koek is commonly enjoyed as a sweet Dutch bakery treat with a hot drink.
- A simple filled pastry: The recognisable shape comes from enclosing almond paste in pastry rounds, then finishing the tops with sliced almonds.

Instructions
- In a bowl, whisk together the plain flour, baking powder, fine sea salt and 120 g caster sugar. Rub in the cold unsalted butter until the mixture looks like fine crumbs. Beat in 1 egg and the vanilla extract just until a soft dough forms.
- Shape the dough into a flat disc, cover, and chill for 30 minutes so it is easy to handle. Meanwhile, make the filling by mixing the ground almonds with 80 g caster sugar. Finely grate in the lemon zest, then add 1 egg and mix to a thick, smooth almond paste.
- Heat the oven to 180°C (355°F) and line a baking tray with a baking mat. Divide the dough into 12 equal pieces and roll each into a ball. Press each ball into a round about 7 cm wide, making a slight dip in the centre.
- Divide the almond paste into 12 portions and shape each into a small disc. Set one portion on each dough round, then bring the dough up and over the filling, pinching to seal. Turn seam-side down and gently flatten to a neat round about 1.5 cm thick.
- Press sliced almonds over the top of each cookie so they adhere. Bake for 18 to 22 minutes, rotating the tray halfway, until golden at the edges and lightly coloured on top. Cool on the tray for 10 minutes, then transfer to a rack to cool completely.
Recipe notes
Tips
- For the neatest shape, weigh the dough and filling and divide evenly before assembling.
- If the dough feels sticky after chilling, dust your hands lightly with plain flour rather than adding extra flour to the dough.
- Use pasteurised eggs if serving to anyone who is pregnant, elderly, very young, or immunocompromised.
Substitutions
- Replace Vanilla extract with the finely grated zest of the Lemon for a brighter, more citrus-forward flavour.
- Replace Sliced almonds with Ground almonds sprinkled lightly over the tops for a more uniform, less crunchy finish.
Storage
- Refrigerate up to 5 days
- Store in an airtight container. For the best texture, bring to room temperature before serving; if freezing, wrap well and freeze for up to 2 months, then thaw at room temperature.
