Ceviche Bowl with Lime-Cured Fish, Rice and Avocado

In this bowl, ceviche’s sharp, citrus-cured character is turned into a more substantial lunch with a base of warm long-grain rice. Very fresh white fish is briefly cured in lime juice until the surface turns opaque, then mixed with red onion, coriander, chilli and olive oil for a clean, bright dressing that soaks into the rice. Cucumber adds crunch, while firm-ripe avocado brings creaminess without dulling the acidity. It is a fresh, quick-assembly rice dish with Latin American influence, best served immediately while the fish is delicate, the lime juices are lively and the toppings keep their texture.

Why this recipe works

  • Bright acidity: Fresh lime juice cures the fish while giving the bowl its clean, sharp flavour.
  • Good texture contrast: Soft rice and creamy avocado balance the crisp cucumber, red onion and tender cured fish.
  • Efficient timing: The fish cures while the rice finishes resting, keeping the overall cooking time practical.

Ingredient notes

  • Choose very fresh fish: Use the freshest suitable white fish available and keep it chilled until preparation. For anyone vulnerable, use cooked fish instead.
  • Use enough lime juice: The fish should sit mostly submerged so the lime can cure it evenly and season the finished bowl.
  • Soften the onion if needed: A short soak in cold water takes the sharp edge off red onion while keeping its crunch.

Timing notes

  • Let the rice rest: Keeping the rice covered off the heat helps the grains finish steaming and fluff up properly.
  • Serve promptly: Ceviche is at its best soon after curing, while the fish is tender and the lime flavour is fresh.

Adjust the heat

  • For less heat: Remove the chilli seeds before chopping, or use a smaller amount of chilli.
  • For more heat: Keep the chilli seeds in, or swap to a sharper chilli such as serrano.
  • Keep it balanced: Add extra chilli gradually so it sharpens the ceviche without overpowering the lime and fish.

Common mistakes

  • Do not over-cure the fish: Leaving the fish in lime juice for too long firms the texture and dulls the fresh flavour.
  • Avoid storing assembled bowls: If leftovers are unavoidable, keep the rice separate and refrigerate the ceviche in a sealed container.

  1. Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. While the rice cooks, cut the white fish fillet into small, bite-sized cubes and put into a non-reactive mixing bowl. Finely slice the red onion, finely chop the red chili pepper, and roughly chop the fresh coriander. Juice the limes.
  3. Add the lime juice to the fish along with the red onion, red chili pepper, fresh coriander, 1 tbsp extra virgin olive oil, and the remaining fine sea salt. Stir well, making sure the fish is submerged as much as possible. Leave to cure for 10 minutes, stirring once halfway through, until the fish looks opaque on the outside.
  4. Cut the cucumber into small dice. Halve the avocado, remove the stone, then cut the flesh into chunks. Fluff the rice with a fork.
  5. Divide the rice between two bowls. Spoon the ceviche over the top, including plenty of the limey juices, then add the cucumber and avocado. Serve straight away while everything is bright and fresh.

Recipe notes

Tips

  • Use the freshest fish you can get and keep it chilled right up until you start; if serving anyone who is pregnant, elderly, very young, or immunocompromised, use cooked fish instead of curing it.
  • For a cleaner onion flavour, soak the sliced red onion in cold water for 5 minutes, then drain well before mixing into the ceviche.
  • If you like it hotter, keep the chilli seeds in; for a milder bowl, remove them before chopping.

Substitutions

  • Replace long-grain white rice with jasmine rice for a more fragrant base.
  • Replace red chili pepper with serrano pepper for a sharper heat.
  • Replace extra virgin olive oil with avocado oil for a softer, buttery finish.

Storage

  • Refrigerate up to 1 days
  • Ceviche is best eaten straight away. If you must store it, refrigerate in a sealed container and eat within 24 hours; the fish will continue to cure and the texture will firm up. Store cooked rice separately and reheat until piping hot before serving.
