Risotto al Barolo con Salsiccia (Barolo Risotto with Sausage)
Why this recipe works
- Layered savoury flavour: Browning the sausage first builds a rich base before the shallots, rice and wine are added.
- Richness with balance: Barolo gives the risotto depth and acidity, helping cut through the butter, Parmesan and pork sausage.
- Classic risotto texture: Gradual stock additions and a final vigorous stir with butter and cheese create a glossy, flowing finish.

Timing notes
- Serve straight away: Risotto is at its best immediately after finishing, while it is still loose, glossy and creamy.
- Brief rest before serving: A short covered rest lets the rice settle and the butter and Parmesan finish emulsifying into the sauce.
Ingredient notes
- Use risotto rice: Arborio rice releases starch as it cooks, giving the dish its characteristic creamy texture without needing cream.
- Choose a dry red wine: Barolo gives the most distinctive Piedmontese character, but any good dry red wine should be balanced rather than sweet.
- Season at the end: Sausage, stock and Parmesan all add salt, so taste after the cheese has been stirred in before adjusting.
Common mistakes
- Adding stock too quickly: Add the hot stock gradually so the rice can release starch and absorb liquid evenly.
- Letting it get too stiff: The finished risotto should move softly in the pan; loosen it with a little hot stock if it tightens before serving.
- Cooking past the bite: Stop when the rice is tender but still has a slight bite, as it will continue to soften briefly off the heat.
Authenticity notes
- Piedmontese character: Risotto al Barolo reflects the food of Piedmont, where structured red wines are often used to bring depth to rice dishes.
- Sausage variation: Adding Italian pork sausage makes the dish more substantial while keeping the same creamy red-wine risotto base.

Instructions
- Pour the chicken stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. You want it steaming but not boiling hard.
- Remove the sausage meat from its skins and break it into small pieces. Heat the olive oil in a large frying pan over a medium-high heat, add the sausage and cook for 6 to 8 minutes until well browned. Transfer to a bowl, leaving any fat in the pan.
- Finely chop the shallots. Reduce the heat to medium, add 20 g of the butter to the pan, then cook the shallots for 3 to 4 minutes until softened and sweet. Stir often so they do not colour too much.
- Add the arborio rice and stir for 1 to 2 minutes until the grains look glossy and lightly toasted at the edges. Pour in the red wine and simmer, stirring, until it is almost fully absorbed.
- Add a ladleful of hot stock and stir until it is absorbed, then continue adding stock a ladle at a time, stirring regularly. Keep the risotto at a steady simmer and cook for 18 to 22 minutes, until the rice is tender with a slight bite and the texture is loose and creamy.
- Stir the browned sausage back into the risotto and cook for 2 minutes to heat through. Take the pan off the heat, finely grate in the parmesan, then add the remaining butter and stir vigorously until glossy and silky. Season with black pepper, cover for 2 minutes, then serve straight away.

Tips
- Keep the stock hot throughout: adding cold stock slows cooking and can make the risotto gluey.
- Aim for a loose, flowing finish; if it tightens before serving, stir in a splash of hot stock to loosen it.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the sausage is cooked through and the risotto is piping hot before serving.
Substitutions
- Replace Dry Red Wine with a lighter-bodied Dry Red Wine if you want a less tannic, fruitier risotto.
- Replace Parmesan with Grana Padano cheese for a slightly milder, sweeter finish.
- Replace Chicken stock with Vegetable stock for a lighter, less meaty base.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in an airtight container. Reheat gently in a saucepan with a splash of water, stirring until piping hot and creamy again; avoid boiling hard.
