Roasted Veggie Taco Bowl with Rice, Beans and Lime Yoghurt

Taco bowls take the seasoning, toppings and freshness of tacos and turn them into a generous rice-based meal that is easy to assemble and eat with a fork. Here, smoky cumin- and paprika-roasted sweet potato and red pepper sit over long-grain rice with warm black beans for substance. Lime yoghurt brings the cooling, tangy element usually provided by crema, while coriander and salsa keep the bowl bright and fresh. It is a practical vegetarian lunch or casual dinner, with enough texture and flavour to feel complete without needing extra sides.

Why this recipe works

  • Smoky, savoury base: Roasting the sweet potato and pepper with smoked paprika and cumin builds deeper flavour than simply warming the vegetables through.
  • Fresh balance: Lime yoghurt cuts through the sweetness of the roasted vegetables and the earthiness of the black beans.
  • Good for prepping ahead: The rice, beans and roasted vegetables keep well when stored separately from the yoghurt sauce.

Texture tips

  • Roast, don’t steam: Spread the sweet potato and pepper out on the tray so the edges brown rather than soften in their own moisture.
  • Keep the rice distinct: Drain the rice well after boiling and keep it covered so it stays warm without becoming wet.
  • Keep the sauce fresh: Add the lime yoghurt just before serving so it stays thick, cool and creamy against the warm bowl ingredients.

Ingredient notes

  • Smoked paprika matters: Smoked paprika gives the bowl its gentle barbecue-like depth; sweet paprika will make it milder and less smoky.
  • Adjust the lime to taste: Add the lime gradually if you prefer a softer tang, or use a little extra juice for a brighter sauce.
  • Rinse the beans: Rinsing canned black beans removes excess canning liquid and gives a cleaner flavour in the finished bowl.

Make-ahead tips

  • Store the sauce apart: Keep the lime yoghurt separate from the rice, vegetables and beans so the bowl does not turn watery in the fridge.
  • Reheat gently: Warm the rice, beans and vegetables with a splash of water until piping hot, then add the cold yoghurt sauce after reheating.
  • Best for lunches: Portion the cooked rice, beans and vegetables into containers, then pack the sauce and salsa separately for serving.

Dietary alternatives

  • Make it vegan: Use a thick unsweetened plant-based yoghurt in place of Greek yoghurt.
  • Make it dairy-free: Choose a dairy-free yoghurt with enough body to hold the lime juice without becoming too thin.

  1. Heat the oven to 220°C (430°F). Rinse the rice, then cook it in a saucepan of lightly salted boiling water for 10 to 12 minutes until tender. Drain well, cover, and set aside to keep warm.
  2. Peel the sweet potato and cut into 2 cm cubes; cut the red pepper into bite-size pieces. Tip both onto a baking tray and toss with the olive oil, smoked paprika, ground cumin, salt and pepper. Roast for 18 to 22 minutes, turning once, until browned at the edges and tender.
  3. Drain and rinse the black beans, then warm them in a small saucepan with a splash of water and 1 crushed garlic clove for 3 to 4 minutes. Taste and season with a pinch of salt if needed. Keep warm on a low heat.
  4. In a mixing bowl, stir together the Greek yogurt, the zest and juice of the lime, and the remaining crushed garlic clove. Finely chop most of the coriander and stir it through, reserving a little to finish. Taste and adjust with a pinch of salt if you like.
  5. Divide the rice between two bowls, then top with the roasted sweet potato and pepper and the warm black beans. Spoon over the lime yoghurt sauce, add salsa, and finish with the reserved coriander. Serve straight away while everything is warm.

Tips

  • For deeper flavour, spread the vegetables out well on the tray so they roast rather than steam.
  • If serving later, keep the yoghurt sauce separate and add it at the last moment so it stays fresh and thick.

Substitutions

  • Replace Greek yogurt with whole-milk yogurt for a looser, milder sauce.
  • Replace smoked paprika with sweet paprika for a less smoky finish.

Storage

  • Refrigerate up to 3 days
  • Cool the rice, vegetables and beans quickly, then refrigerate in an airtight container. Store the lime yoghurt sauce separately and add after reheating. Reheat the rice, vegetables and beans in the microwave or in a saucepan with a splash of water until piping hot.
