Roasted Root Vegetable Bowl with Barley and Dill Dressing

Grain bowls work best when the base, vegetables and toppings each bring a clear role. Here, pearled barley gives a chewy, nutty foundation for roasted carrots, parsnips and beetroot, whose sweetness deepens as their edges caramelise. The Nordic-style character comes through in the dill, mustard and yoghurt dressing: cool, tangy and herby against the warm roots. Quick-pickled red onion cuts through the richness, while toasted pumpkin seeds add a final crisp finish. It is a practical vegetarian lunch or light supper, good warm from the oven or served at room temperature.

Why this recipe works

  • Good texture contrast: Chewy barley, tender roasted roots, crisp pickled onion and toasted seeds keep the bowl varied rather than heavy.
  • Balanced sweetness and tang: The vinegar-pickled onion and mustard yoghurt cut through the natural sweetness of the roasted vegetables.
  • Meal prep friendly: The barley, vegetables, dressing and pickles can be stored separately, then assembled when ready to eat.

Ingredient notes

  • Use sturdy root vegetables: Carrots, parsnips and beetroot hold their shape well during roasting and bring a good mix of sweetness, earthiness and colour.
  • Cut evenly for better roasting: Keep the pieces a similar size so they soften at the same rate; beetroot can be slightly smaller because it often takes longer.
  • Fresh dill gives the cleanest flavour: Fresh dill works best in the yoghurt dressing, where its bright, grassy flavour stays noticeable against the mustard and vinegar.

Make-ahead tips

  • Store components separately: Keep the barley, roasted vegetables, pickled onion and dressing in separate containers so the seeds stay crisp and the dressing stays fresh.
  • Reheat before assembling: Warm the barley and vegetables in a 180°C (355°F) oven until piping hot, then add the cold dressing, pickles and pumpkin seeds just before serving.
  • Good for packed lunches: Assemble the bowl shortly before eating, or pack the dressing separately and spoon it over at the last minute.

Texture tips

  • Drain the barley well: Let the cooked barley steam-dry briefly after draining so it stays chewy rather than wet in the bowl.
  • Give the vegetables space: Spread the roots out on the tray so they roast and caramelise at the edges instead of steaming.
  • Loosen the dressing if needed: For a more pourable dressing, whisk in a little water gradually until it drizzles easily.

Serving ideas

  • Finish with extra dill: A final scattering of chopped dill reinforces the fresh, herby flavour of the dressing.
  • Serve with simple greens: A crisp cucumber salad or lightly dressed leafy greens work well alongside the warm grains and roasted roots.

  1. Heat the oven to 220°C (430°F). Rinse the barley, then tip it into a saucepan with plenty of cold water and 1 tsp of the salt. Bring to the boil, then cook for 25 to 30 minutes until tender with a little bite.
  2. Peel the carrots, parsnips and beetroot, then cut them into bite-size chunks. Toss on a baking tray with the rapeseed oil, the remaining 1 tsp salt, and the black pepper. Roast for 25 to 30 minutes, turning once, until tender and lightly caramelised at the edges.
  3. While the vegetables roast, thinly slice the red onion and put it in a bowl. Add the apple cider vinegar and a pinch of the salt from the measured amount, then scrunch with your hands and leave to pickle until softened and bright pink. Stir once or twice as it sits.
  4. In a second bowl, whisk the Greek yogurt with the Dijon mustard and 1 tbsp of the apple cider vinegar from the measured amount. Finely chop the dill and stir it through, then season with a little more black pepper if you like. Keep the dressing cool while you finish the bowl.
  5. Toast the pumpkin seeds in a dry pan over a medium heat for 2 to 3 minutes, shaking often, until they start to pop and smell nutty. Drain the barley well in a colander and let it steam-dry for a minute. Taste and add a pinch more salt if needed.
  6. Divide the barley between two bowls and pile the roasted vegetables on top. Spoon over the dill and mustard yoghurt dressing, then scatter with the pickled onion and toasted pumpkin seeds. Serve straight away while the vegetables are warm.

Recipe notes

Tips

  • Cut the roots to a similar size so they roast evenly; beetroot can be slightly smaller as it takes longer to soften.
  • If you want a looser dressing for drizzling, whisk in 1 to 2 tbsp water until it reaches your preferred consistency.
  • For best colour, roast the beetroot on one side of the tray so it does not stain the other vegetables too much.

Substitutions

  • Replace Pearled barley with bulgur for a quicker-cooking grain base.
  • Replace Greek yogurt with crème fraîche for a richer, less tangy dressing.
  • Replace Apple cider vinegar with white wine vinegar for a cleaner, sharper pickle.

Storage

  • Refrigerate up to 3 days
  • Store the barley, roasted vegetables, pickled onion, and dressing in separate airtight containers for the best texture. Reheat the barley and vegetables in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, then add the cold dressing and pickles just before serving.
